Apple Cider Muffins with Streusel Topping
These Apple Cider Muffins with Streusel Topping are made with fresh apples, concentrated apple cider and are topped with a brown sugar streusel topping.
This summer, we were able to spend an entire week at the cabin. It was so fun to just relax and unwind. No work, no laundry, no chores. Just lots of fun and family time!
We typically are only able to go up to the cabin for a long weekend. When we are only there for a few days, we never want to leave the lake – it’s just too nice! We still spent a ton of time on the lake, but we explored some (new to us) places, too!
Summer fun
We played a good old fashioned game of mini golf. Why is it that mini golf is equal parts fun and insanely frustrating?! Hopefully that’s not just me – I know Jack can relate!
The boys were able to do a little fossil dig, too. And when I say a fossil dig, I mean a sandbox with a bunch of random things tossed in. But, the boys loved it! Will was super into being a “fossil digger”.
We got to explore some of the surrounding towns, making sure to ALWAYS find the local candy shop. Basically, the kids correlate vacation with candy (or ice cream).
One day, we took the boys to this super fun amusement park. They got to ride go-karts, do an awesome ninja warrior course and have fun in the batting cages. Much to his dismay, Will wasn’t quite tall enough to drive the go-karts on his own, but Matt and I were able to give the kids a fun ride!
Jack was tall enough to drive the smaller go-karts on his own but was very unsure on whether or not he wanted to do it. He watched other kids going first and was very concerned about their erratic driving. Reluctantly, he agreed. He started off slow and then pulled over to the side to let other cars pass him. It was absolutely hysterical!
How to Make Apple Cider Muffins with streusel topping
- One of the most important steps in making these muffins is to concentrate the apple cider. In order to do this, you need to slowly boil the apple cider. This way, the water boils off and you are left with a really strong and delicious apple cider flavor.
- Shred the apples. You can just finely dice them if you don’t have a grater, but a cheese grater works perfectly.
- Combine all of the dry ingredients first. This ensures that all of the components are properly mixed before adding the wet ingredients.
- If you are using my all-time favorite muffin tin, you don’t need any muffin liners (or non-stick spray). But, if you are using a traditional muffin tin, make sure to use some type of muffin liner.

Tips for Involving Kids
- With your supervision, have your kids help you measure out all of the ingredients.
- If your kiddo is old enough, let them grate the apple.
- Let them spoon the streusel crumble on top of each muffin.
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Apple Cider Muffins with Streusel Topping
Ingredients
Muffin Ingredients
- 3 cups apple cider boiled down to 1½ cups
- 1 cup shredded apples about 3 small apples
- 2 cups white flour
- 1 tsp baking soda
- ¾ tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp cardamom
- ¼ tsp salt
- ½ cup brown sugar
- ¼ cup skim milk
- 1 tsp vanilla extract
- 1 egg
- 4 Tbsp butter melted
Streusel Topping
- 2 Tbsp butter melted
- ¼ cup flour
- ¼ cup brown sugar
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- While the oven is preheating, simmer the apple cider over medium heat for about 25 minutes. You want the apple cider to be concentrated, so that you end up with about 1½ cups.3 cups apple cider
- Once the apple cider has been concentrated, let it cool.
- Shred the apples with a grater (skin and all).1 cup shredded apples
- In a large bowl, mix together all of the dry ingredients.2 cups white flour, 1 tsp baking soda, ¾ tsp baking powder, 1 tsp cinnamon, ½ tsp nutmeg, ¼ tsp cardamom, ¼ tsp salt, ½ cup brown sugar
- Add the wet ingredients and mix to combine.¼ cup skim milk, 1 tsp vanilla extract, 1 egg, 4 Tbsp butter
- Divide the batter evenly into the muffin tin.
- In a small bowl, mix together all of the streusel ingredients.2 Tbsp butter, ¼ cup flour, ¼ cup brown sugar
- Top the batter with the streusel topping.
- Bake at 350 degrees Fahrenheit for 25 minutes.
