I love snacks. I am a three square meals a day type of person plus snacks in between. I’ve had multiple people comment on how I always carry snacks for the kids with me wherever I go (they are 7 and 10 now, so they don’t really need them). Little do they know, those snacks in my purse are mostly for me!
It took me awhile to actually realize this, but I am the person that can easily turn into the definition of “hangry”. And, my husband will very willingly attest to this. We were in NYC once and we had been walking around all day (as most people do when they are in NYC); I was hot, tired and hungry.
We walked past one of those quintessential NY hot dog stands and Matt suggested I get a hot dog to “cheer up”. I kind of thought his idea sounded disgusting but I figured, hey why not?! That hot dog was literally the most delicious hot dog I had ever consumed. And, five seconds later, just like the Snickers commercial, I snapped back to my old self! Now, whenever Matt can tell the “hangry-ness” is coming on, he asks if I need a hot dog.

We always have the fridge stocked with fruits and veggies, but sometimes I want something different for a snack. I created these Easy Almond Butter Coconut Chocolate Chip Energy Bites to satisfy that craving. And, believe me, they satisfied that craving!
Easy Almond Butter Coconut Chocolate Chip Energy Bite ingredients
- old fashioned oats
- almond butter
- shredded coconut
- mini chocolate chips
- coconut oil
- white sugar
These granola bites are great for breakfast on-the-go, a healthy snack or a treat after dinner (my kids classify these in the “dessert” category). I would recommend storing them in the fridge or freezer, otherwise they tend to get a bit crumbly. If you prefer granola bars, you can just lay the mixed granola out on a piece of parchment paper (on top of a cookie sheet) and press it flat. After freezing the bars, you can cut them to your size preference. Whether you make them in bars or bites – either way they will be delicious!
Tips for involving kids
- Let your kids assist in measuring and combine the ingredients (remember – there WILL be messes and that’s okay)!
- Have them help you roll the granola into bites.

- There is always going to be a mess when you cook with your kids but, like my little guy Will (3 years old) says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Easy Almond Butter Coconut Chocolate Chip Energy Bites
Ingredients
- 2 cups old fashioned oats
- 1 cup almond butter
- ½ cup shredded coconut
- ½ cup mini chocolate chips
- 2 Tbsp coconut oil melted
- 1 Tbsp white sugar
Instructions
- Combine the oats, almond butter, coconut and chocolate chips in a bowl.2 cups old fashioned oats, 1 cup almond butter, ½ cup mini chocolate chips, ½ cup shredded coconut
- Melt the coconut oil and measure out 2 Tbsp of the melted oil.*2 Tbsp coconut oil
- Measure out 1 Tbsp of white sugar and combine it with the melted coconut oil.1 Tbsp white sugar
- Pour the coconut oil/sugar slurry into the granola mixture and stir to combine.
- Roll the granola into bite sized balls and place on a parchment lined cookie sheet.
- Freeze for 45 min to 1 hour and store in the freezer or refrigerator.
