Cookie Ice Cream Sandwich (Almond Coconut Chocolate Chip)
You can’t go wrong with these Cookie Ice Cream Sandwiches – they combine your favorite ice cream and freshly baked Almond Coconut Chocolate Chip Cookies! The cookies are the perfect combination of crisp on the outside and chewy in the middle.
We just celebrated my husband’s birthday! He turned 35 and did not want to make a big deal out of it. He’s always the first to throw me a big shindig but never wants it reciprocated (kind of bragging here, but I have an extremely selfless and thoughtful husband)!
For my 30th birthday party, he threw me a surprise party on a PedalPub! If you’ve never done it before (and you are over 21), it is SO fun!! You are able to bring adult beverages on board and pedal your little mobile pub all over city streets (yes, you get a lot of looks and honks). Its perfect – you can work off those calories just as you are drinking them!
Then, for my birthday this past year, we had a super fun morning with the boys exploring Minnehaha Falls. We hiked around the falls and then explored the area by surrey (see picture below). We went to one of my favorite restaurants, SeaSalt. It is so picturesque – it’s in the middle of a park and is 200 feet from the falls. We get to sit there and enjoy the serenity while Jack and Will get to run around in the park – its amazing!
After we finished lunch, I thought it had already been the BEST day. But, Matt had even more up his sleeve! When we got home, he told me to head to the spa and enjoy my scheduled massage but to make sure I was home by 6pm. Ummmm, okay, twist my arm. The spa experience alone made my birthday magical but then I came home to Matt, Jack and Will all making me DINNER!
Oh my gosh, I could have melted into a puddle right there (but maybe that was because of my insanely relaxed body from the spa)! Jack and Will escorted me outside on the deck where I was greeted with fresh flowers and a beer (Matt taught them the way to my heart)! Matt and the boys made me an incredibly delicious dinner of salmon, asparagus and a salad – it was all so good!
So, now it’s my turn to reciprocate the thoughtfulness. Oh boy. What Matt doesn’t really want in birthday celebrations, he wants in birthday desserts. He’s not really a cake person though, so that rules out a lot of options. He is, however, a cookie person (definitely a trait that was passed down from his dad)! Matt absolutely loves my Almond Coconut Chocolate Chip Cookies.
While these cookies are amazing (I get frequent requests from Matt, friends and family to make these), I don’t think they are quite special enough for a birthday (mostly because I make them all the time)! So, I decided to turn them up a notch and make them into Ice Cream Cookie Sandwiches – they did NOT disappoint!

If you like cookies, and you like ice cream, you have to like cookie ice sandwiches, right? Well, Matt told me they were his favorite dessert ever! I mean, it’s no surprise but they do say the way to a man’s heart is through his stomach, right?!
Let’s Talk Cookies
If you haven’t tried this cookie recipe yet, you need to! In fact, you HAVE to in order to make this recipe. These cookies are perfect to use for an ice cream sandwich. Number one, they are thin and chewy. I think the best ice cream cookie sandwiches have an even ratio of cookie to ice cream. Since you have two cookies sandwiching the ice cream, it makes the ratio just perfect if the cookies are thin.
Number two, they are loaded with chocolate chips and coconut flakes. And, they have a light almond flavor that perfectly compliments the chocolate chips and coconut. Now, just sandwich those cookies with some ice cream and you have the PERFECT dessert!
How to Make Ice Cream Cookie Sandwiches
- Make the Almond Coconut Chocolate Chip Cookies
- Let them cool and then place 12 of them in the freezer.
- Once the cookies have hardened a little bit, flip 6 of them upside down.
- Evenly divide the ice cream between all 6 cookies.
- Top the ice cream with the remaining 6 cookies.
- Enjoy right away or individually wrap and store in the freezer until ready to eat!
Tips for Involving Kids
- Let your kids help you make the cookies – have them measure out the ingredients and use the mixer.
- Once you are ready to assemble the sandwiches, scoop the ice cream and have your kiddo put the top cookie on the ice cream (Will absolutely loved this job – he thought it was pretty great that he was the one who got to complete the final step)!
- There is always going to be a mess when you cook with your kids but, like my little guy Will (3 years old) says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Cookie Ice Cream Sandwich (Almond Coconut Chocolate Chip)
Ingredients
- 12 Almond Coconut Chocolate Chip Cookies
- 1½ cups Ice Cream your choice of flavor – I use coconut or vanilla
Instructions
- After you make the Almond Coconut Chocolate Chip Cookies, put 12 cookies on a plate and place them in the freezer for 10-15 minutes.12 Almond Coconut Chocolate Chip Cookies
- Once the cookies have slightly hardened, take them out and flip them upside down.
- Divide the ice cream evenly between 6 cookies.1½ cups Ice Cream
- Then, place the remaining cookies on top of the ice cream and enjoy!
