Easy Almond Butter Coconut Chocolate Chip Energy Bites

These Coconut Chocolate Chip Granola Bites are packed with protein, thanks to the almond butter, and flavor. They have minimal ingredients and are a perfect snack on the go.

Ingredients
  

  • 2 cups old fashioned oats
  • 1 cup almond butter
  • ½ cup shredded coconut
  • ½ cup mini chocolate chips
  • 2 Tbsp coconut oil melted
  • 1 Tbsp white sugar

Instructions
 

  • Combine the oats, almond butter, coconut and chocolate chips in a bowl.
    2 cups old fashioned oats, 1 cup almond butter, ½ cup mini chocolate chips, ½ cup shredded coconut
  • Melt the coconut oil and measure out 2 Tbsp of the melted oil.*

  • Measure out 1 Tbsp of white sugar and combine it with the melted coconut oil.

  • Pour the coconut oil/sugar slurry into the granola mixture and stir to combine.
  • Roll the granola into bite sized balls and place on a parchment lined cookie sheet.
  • Freeze for 45 min to 1 hour and store in the freezer or refrigerator.

Notes

*Before adding the sugar to the melted coconut oil, make sure that the oil is hot so that the sugar will dissolve.
