This Mango Chicken Salad is loaded with juicy chicken, sweet mango and finished with a delicious lemon vinaigrette. It is perfect on it's own or as a side dish with any meal.

Ingredients
  

Chicken Marinade

  • 2 lbs boneless skinless chicken breasts cut into bite-sized pieces
  • ¼ cup soy sauce
  • 2 Tbsp lemon juice
  • ½ tsp ground ginger
  • 1 Tbsp sesame oil
  • lettuce for serving

Mango Salsa

  • 15 oz can Del Monte mangos drained*
  • ¼ cup red onion diced
  • ½ cup cilantro chopped
  • 1 Tbsp jalapeno diced
  • 1 Tbsp lemon juice
  • 1 tsp salt

Vinaigrette

  • ½ cup olive oil
  • ¼ cup lemon juice
  • salt and pepper to taste

Instructions
 

  • Combine all of the ingredients in the chicken marinade into a large bowl.
    ¼ cup soy sauce, 2 Tbsp lemon juice, ½ tsp ground ginger, 1 Tbsp sesame oil
  • Add the chicken and let it marinate while you prepare the rest of the salad.
    2 lbs boneless skinless chicken breasts
  • While the chicken is marinating, combine all of the ingredients for the mango salsa and mix to combine.
    15 oz can Del Monte mangos, ¼ cup red onion, ½ cup cilantro, 1 Tbsp jalapeno, 1 Tbsp lemon juice, 1 tsp salt
  • Refrigerate the mango salsa until ready to serve.
  • Combine vinaigrette ingredients in a jar and shake to combine.
    ½ cup olive oil, ¼ cup lemon juice, salt and pepper
  • Cook the chicken over medium high heat (you can pour the marinade into the pan as well).
  • When ready to eat, serve the cooked chicken and the mango salsa over a bed of lettuce and finish with the vinaigrette.
