Combine all of the ingredients in the chicken marinade into a large bowl.
¼ cup soy sauce, 2 Tbsp lemon juice, ½ tsp ground ginger, 1 Tbsp sesame oil
Add the chicken and let it marinate while you prepare the rest of the salad.
2 lbs boneless skinless chicken breasts
While the chicken is marinating, combine all of the ingredients for the mango salsa and mix to combine.
15 oz can Del Monte mangos, ¼ cup red onion, ½ cup cilantro, 1 Tbsp jalapeno, 1 Tbsp lemon juice, 1 tsp salt
Refrigerate the mango salsa until ready to serve.
Combine vinaigrette ingredients in a jar and shake to combine.
½ cup olive oil, ¼ cup lemon juice, salt and pepper
Cook the chicken over medium high heat (you can pour the marinade into the pan as well).
When ready to eat, serve the cooked chicken and the mango salsa over a bed of lettuce and finish with the vinaigrette.
