Crack the eggs into a shallow bowl and beat. Add the milk, cinnamon and vanilla and stir to combine.
4 eggs, ¼ cup skim milk, 1 teaspoon ground cinnamon, ½ teaspoon vanilla extract
Heat a pan over medium heat.
Using a fork, dip one piece of the bread into the egg mixture. Then, flip the slice of bread over and dip the other side into the egg mixture as well.
8 slices Brioche or Challah bread
Place the coated piece of bread into the warm pan and cook, on either side, until golden brown.
While the french toast is cooking, thinly slice the apples.
2 Honeycrisp apples
Melt the butter in a small saucepan over medium heat. Add the vanilla and brown sugar to the melted butter.
3 Tbsp butter, 3 Tbsp brown sugar, ¼ tsp vanilla extract
Place the sliced apples into the melted butter mixture and cook for 2-3 minutes.
Serve the french toast topped with the caramel apple topping.
