Combine all marinade ingredients and pour into a crockpot.
3 Tbsp red wine vinegar, 3 Tbsp olive oil, 3 cloves garlic, ½ white onion, ½ lemon, ½ cup chicken broth, 1 Tbsp dried oregano, 1 tsp salt, ½ tsp black pepper
Add chicken to the crockpot and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
2 lbs boneless skinless chicken breasts
While the chicken is cooking, blend all ingredients for the tzatziki sauce and refrigerate.
2 cups plain nonfat greek yogurt, 1 English cucumber, 3 cloves garlic, 1 Tbsp fresh dill, ½ lemon, 3 Tbsp olive oil
When chicken is done cooking, remove it from the crockpot and shred. Return chicken to the crockpot.
Assemble bowls with any combination of the following: rice, cucumbers, tomatoes and red onions.
For serving: brown rice
Top with the tzatziki sauce and enjoy!
