Ingredients
  

  • 1 tbsp sesame oil
  • 2 cloves garlic
  • 1 tbsp ginger grated
  • ¼ cup red curry paste
  • 1 lb ground chicken
  • 1 can coconut milk 13.5 ounces
  • 1 red bell pepper diced
  • 3 packages ramen noodles
  • 1 lime juiced
  • 1 bunch cilantro for serving

Instructions
 

  • In a saucepan over medium heat, add the sesame oil, garlic and ginger.

  • Sauté until the garlic is golden brown and stir in the red curry paste.

  • Add the ground chicken and cook until no longer pink.

  • When the chicken is done cooking, add the coconut milk and red bell pepper and cook for an additional 3 minutes.
    1 can coconut milk, 1 red bell pepper
  • Cook the ramen noodles according to package instructions, discarding the seasoning packet and draining the noodles.
    3 packages ramen noodles
  • When ready to serve, divide the ramen noodles evenly and top with the red curry coconut mixture.
  • Garnish with cilantro and a squeeze of lime.
