Frozen Spinach Cubes - for smoothies

Do you want to eat more veggies? Do you find yourself never being able to finish a carton of spinach? Does it go bad before you have a chance to eat it? If you answered “yes” to any of these questions, then you need to make these Frozen Spinach Cubes. They are great to eliminate waste and to have to use in your next smoothie!

Ingredients
  

  • 2 ice cube trays
  • 16 oz fresh spinach
  • 1 cup orange juice

Instructions
 

  • Blend half of the spinach and half of the orange juice until smooth.
    16 oz fresh spinach, 1 cup orange juice
  • Add the remaining spinach and orange juice and puree.
  • Once the spinach/orange juice mixture has reached a smooth consistency, pour the mixture into the 2 ice cube trays.
    2 ice cube trays
  • Put the ice cube trays in the freezer and let them freeze until solid.
  • When frozen solid, pop the spinach cubes out of the tray and put them in a freezer bag for storage.
  • When you are ready to have a smoothie, put 1 or 2 frozen spinach cubes into the blender with your other ingredients.

Notes

You can substitute orange juice for your liquid of choice. I like to use orange juice for blending because I use orange juice in my smoothies.
