Ham and Swiss Egg Bites

If you are looking for an easy breakfast, this is the recipe for you! These Ham & Swiss Egg Bites are great for weekday mornings - pop a few out of the freezer, heat them up and breakfast is on the table in minutes.

Ingredients
  

  • 10 eggs
  • ½ cup skim milk
  • ½ pound ham diced
  • 1 cup swiss cheese shredded
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 375 F.
  • Crack the eggs into a bowl and add the milk.

  • Whisk until well combined. Sprinkle with salt and pepper.

  • Evenly divide the ham and the cheese between the 12 muffin cups.
    ½ pound ham, 1 cup swiss cheese
  • Using a turkey baster, evenly divide the egg mixture between the 12 muffin cups.
  • Bake for 15 minutes, or until the eggs are completely set.
  • Enjoy them right out of the oven, or cool and freeze for later.
