Homemade Rhubarb Simple Syrup

This Homemade Rhubarb Simple Syrup is made with only three ingredients and has so many uses. It's the perfect addition to cocktails, mocktails or coffee.

  • In a saucepan over high heat, bring the water to a boil.
    1 cup water
  • Add the white sugar and rhubarb.
    1 cup white sugar, 4 cups cut rhubarb
  • Continue boiling until the sugar is dissolved and then simmer for 15 minutes.
  • Place a fine mesh strainer over a bowl or large measuring cup.
  • Pour the rhubarb mixture through the strainer.
  • Use the back of a spoon to press on the cooked rhubarb in the strainer to extract more syrup.
  • Discard the cooked rhubarb (or use it as a sundae topping)!
  • Pour the cooled Rhubarb Simple Syrup into a clean container and, once cooled, cover the bottle and refrigerate.
  • Store the simple syrup in the refrigerator for up to one month.
