Muffin Batter

  • 1 ½ cup white flour
  • ½ cup white sugar
  • 2 tsp baking powder
  • ½ cup skim milk
  • ½ cup butter, melted
  • 1 egg
  • 1 cup raspberries, fresh or frozen

Streusel Topping

  • ¼ cup pecans, chopped
  • ¼ cup brown sugar
  • ¼ cup white flour
  • 2 tbsp butter, melted

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Mix the muffin batter dry ingredients together first.
    1 ½ cup white flour, ½ cup white sugar, 2 tsp baking powder
  • Add the wet ingredients and mix to combine.
    ½ cup skim milk, ½ cup butter, melted, 1 egg, 1 cup raspberries, fresh or frozen
  • Spoon 1-2 Tbsp into each muffin tin. Place 2-3 raspberries on top of that batter.
  • Evenly divide the remaining batter amongst the muffin tins.
  • Top with remaining raspberries.
  • Combine the streusel ingredients and evenly top the muffin batter.
    ¼ cup pecans, chopped, ¼ cup brown sugar, ¼ cup white flour, 2 tbsp butter, melted
  • Bake for 30-35 minutes until the muffins are golden brown.
