8 slices of brioche bread 3 Tbsp olive oil divided 1 zucchini sliced 1 red bell pepper sliced 10 oz package portobello mushrooms sliced 8 oz package fresh mozzarella sliced 8 oz red bell pepper hummus salt and pepper to taste

Preheat the oven to 425 degrees Fahrenheit.
Put the zucchini, red bell pepper and mushrooms on a sheet pan and drizzle with 1 Tbsp olive oil. Season with salt and pepper.
3 Tbsp olive oil, 1 zucchini, 1 red bell pepper, 10 oz package portobello mushrooms, salt and pepper
Roast the vegetables for 15 - 20 minutes.
When ready to serve the paninis, heat a grill pan** over medium heat. Brush (or spray) the remaining olive oil on one side of the slices of bread.

Put the olive oil side down into the pan and put 3 slices of mozzarella cheese one one slice of bread.
8 oz package fresh mozzarella
Place a cover on the grill pan and cook for 3-4 minutes to melt the cheese.
Once melted, remove the sandwich from the heat and top the melted mozzarella with the roasted veggies.
Spread 2 oz of the hummus on the other slice of bread.
