Red pepper hummus, melted mozzarella cheese, roasted mushrooms, peppers and zucchini all sandwiched between 2 slices of perfectly browned brioche bread. This Roasted Vegetable & Hummus Panini is quickly going to become your new favorite sandwich!

Ingredients
  

  • 8 slices of brioche bread
  • 3 Tbsp olive oil divided
  • 1 zucchini sliced
  • 1 red bell pepper sliced
  • 10 oz package portobello mushrooms sliced
  • 8 oz package fresh mozzarella sliced
  • 8 oz red bell pepper hummus
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 425 degrees Fahrenheit.
  • Put the zucchini, red bell pepper and mushrooms on a sheet pan and drizzle with 1 Tbsp olive oil. Season with salt and pepper.
    3 Tbsp olive oil, 1 zucchini, 1 red bell pepper, 10 oz package portobello mushrooms, salt and pepper
  • Roast the vegetables for 15 - 20 minutes.
  • When ready to serve the paninis, heat a grill pan** over medium heat. Brush (or spray) the remaining olive oil on one side of the slices of bread.
    8 slices of brioche bread
  • Put the olive oil side down into the pan and put 3 slices of mozzarella cheese one one slice of bread.
    8 oz package fresh mozzarella
  • Place a cover on the grill pan and cook for 3-4 minutes to melt the cheese.
  • Once melted, remove the sandwich from the heat and top the melted mozzarella with the roasted veggies.
  • Spread 2 oz of the hummus on the other slice of bread.

  • Assemble the sandwich and ENJOY!!
