Remember how I grew up with a huge garden in our front yard? If not, you can read about it here. Well, my parents have continued on with that garden even after my siblings and I moved out. And, now, I just have 2 tiny little raised garden beds. Very manageable (although not too many veggies coming my way).

The great thing about my parents living close is that I get an abundance of vegetables and fruit dropped off at my house whenever my parents come to visit (thanks Mom and Dad – you guys are the BEST)! This time we got a whole ton of carrots!!

How to Make Brown Sugar Glazed Carrots:
- If you want to go the quick and easy route, buy pre-sliced carrots. If that isn’t your style, I highly recommend using a mandolin. I held off on buying one for years (I was afraid I would slice off my finger), but I finally did. This is the one I have and I love it.
- After your carrots are sliced to your liking, melt the butter in a pan over medium heat.
- Add the carrots and the brown sugar and cook until the carrots have a bit of a char.
- Enjoy warm!

My boys gobble these up and always ask for seconds. I have learned to double or triple this recipe because otherwise we run out of them at dinner. Okay enough talk about carrots, I’m off to go eat an entire bowl of them (I seriously am going to)! Hope you enjoy these brown sugar glazed carrots!
frequently asked questions
What kind of carrots should I use?
I like to use whole carrots because I think they have a fresher taste. However, if you are looking to save time, pre-sliced carrots will work just as well. And, we can’t forget those cute little baby carrots! You can use those, too.
Can I make these carrots ahead of time?
If you are using whole carrots, you can slice the carrots ahead of time. Then, when you are ready to prepare the dish, just pop them out of the fridge and cook away. I would not recommend cooking them ahead of time. The reason is that they will become slightly mushy when you need to reheat them.
How do I keep the carrots from getting too soft?
My best piece of advice is to parboil the carrots before cooking them on the stove. In order to parboil the carrots, put them in cold salted water, bring to a boil, and simmer for about 3 minutes. Then, add them to the pan to cook.
Can I double the recipe?
Yes! You can double, triple, quadruple the recipe. Basically, make as many carrots as you can handle.
