Easy Sweet Potato Toast (made in the toaster)
This Easy Sweet Potato Toast swaps sliced sweet potato for bread, but it is still cooked in the toaster. Perfectly toasted sweet potato is topped with scrambled eggs, tomatoes, parsley and onion. This healthy and filling breakfast is going to quickly become your new favorite!
Ever since we had two kids, Matt and I try really hard to give both Jack and Will their own special one-on-one time. Whether that’s kid-directed play for 10 minutes or their own special day, it has really worked great for us.
Recently, Will was at my parents (having his own special weekend ?), so Matt and I decided it was the perfect time to have a special day with just Jack.
We started out the morning with donuts. Because, well donuts. What’s not to love?! I think the smile on Jack’s face accurately describes how he felt about it!
After our extremely healthy breakfast, we thought it would be fun to take Jack mini golfing. The only problem – it was pouring rain outside. Matt had the genius idea of taking Jack to Can Can Wonderland. Indoor mini golf, all the arcade games you can handle and delicious beverages for adults? Ummm, yes please!
Jack thought it was the most amazing place he had ever been! On the contrary, I will say it’s a bit of sensory overload when you first walk in. But, sensory overload in the best way possible. The mini golf course consists of different art installations from local artists – it is absolutely incredible! Matt and I have been there multiple times and they change up the mini golf course all the time.
The arcade portion of Can Can Wonderland is really fun, too! You pay $10 for an entrance fee and then you get to play as many arcade games as your heart desires (and Jack’s heart desired A LOT)!
It was such a fun and special treat to get to spend the day having fun with Jack! When Will came back from my parent’s house, Jack filled him in on our adventures. However, it only took Will about 0.5 seconds to ask when he could go to Can Can Wonderland!
Breakfast Foods
I have a weird thing with breakfast. I do not like to eat the same thing every morning. But, I also don’t want to make something new every morning either. I kind of get in these “breakfast phases”, for lack of a better term. I make something that I really love and then I make it every morning for a week and then I need to come up with something new. Odd? Perhaps. But it works for me!
Sweet Potato Toast
Toasts are a big thing these days. Avocado toast. Goat cheese and honey toast. Pear and jam toast. I mean the options are truly endless. But, what if we switched up the main vehicle? What if we didn’t used the traditional toasted bread?
And that’s when my idea of sweet potato toast was born. Sweet potato is so versatile. You can cube it, spiral it, or slice it. You can sauté it, bake it and fry it. So, I thought – why not try toasting it?
How to Toast a Sweet Potato
The first step in toasting sweet potato is slicing it. I have found the best way to do this is using a mandolin. Now, I know when I suggest using a mandolin, the natural visceral reaction is no, never. Not using a mandolin. I was in the same boat, and then I found this one. I’m obsessed and I haven’t even gotten a scratch! It’s relatively small (and easy to use), plus it has a little handle you can pierce your sweet potato with to make sure your hands stay clear.
The next step in toasting a sweet potato is, well, a toaster. This is the one we have – tried and true. We’ve had it for 12 years and counting!
Toaster Setting
You may not think that a toaster has enough power to cook a slice of sweet potato, but it does! The only triick is that you have to toast it a few more times than you would toast bread. 3 specifically, well at least on my toaster!
I’ve found that 3 is the magic number on my toaster. I set the toaster to high and then need to press the toast button three times for the slice of sweet potato to get browned on the outside and soft in the middle.
Do I Need to Peel the Sweet Potato?
You don’t have to! But, it’s totally up to you. The sweet potatoes will still toast the exact same way but you just need to make sure that you scrub the potato well if you don’t peel it first.

Sweet Potato Toast Toppings
Just like with regular toast, you can customize sweet potato toast with your favorite toppings. My personal favorite toppings are scrambled eggs, fresh tomatoes, parsley and onion. I toss the tomatoes, parsley and onion in a little olive oil and apple cider vinegar and it is so deliciously good!

Easy Sweet Potato Toast (made in the toaster)
Ingredients
- 1 sweet potato
- 3 eggs scrambled
- 1 Tbsp olive oil
- 1 cup cherry tomatoes
- 2 Tbsp fresh parsley chopped
- 1 Tbsp red onion diced
- 1 tsp apple cider vinegar
- salt & pepper to taste
Instructions
- Wash and peel the sweet potatoes. Slice into ¼ inch slices.1 sweet potato
- Turn your toaster to the highest setting and toast the sweet potato slices. You will need to repeat this 3 to 4 times until the sweet potato feels soft.
- While the sweet potato is cooking, scramble the eggs.3 eggs
- In a small bowl, combine the tomatoes, parsley, onion, apple cider vinegar and salt and pepper.1 cup cherry tomatoes, 2 Tbsp fresh parsley, 1 Tbsp red onion, 1 tsp apple cider vinegar, salt & pepper
- When the sweet potato slices are cooked, remove them from the toaster and lightly drizzle with olive oil.1 Tbsp olive oil
- Top them with the scrambled eggs and the tomato mixture.
- Season with salt and pepper and enjoy!
