Some people are in awe of movie stars, sports players or musicians. Me? Not so much. I get star struck from chefs. Yep, I’m serious. I have always admired what chefs can do – their talent, creativity and execution. It is very inspiring to me and I get all tongue tied when I meet a chef.
My admiration for chefs
Have you ever watched Top Chef? If not, go run and watch all the past seasons. Now. But, for real, catch up on the old seasons because a new season just started!! When Matt and I visit a new city, we love to try out the restaurants from the different Top Chef contestants (yes, I have convinced Matt to share the same obsession with Top Chef as me)!
My personal favorite experience (and Matt’s most embarrassing) was when we went to Richard Blais’ new restaurant – The Crack Shack – in San Diego. I was SO excited to check out his new outdoor fast-casual restaurant and maybe have the chance to meet him. The whole ride over there, I talked about how amazing it would be if we actually got to see him!
Well, wouldn’t you know, right as our Uber dropped us off, who was walking by our car but Richard Blais himself!! I knew this was my moment – my chance to meet my most idolized chef. As I got out of the car, I apologized to Matt in advance because I was most definitely about to embarrass myself (and him)!
“Sir, excuse me sir!” That didn’t catch his attention. But you know what did?! Me, running down the sidewalk after him yelling, “Hey, RICHARD BLAIS!!!” That stopped him dead in his tracks. It was worth ALL of Matt’s embarrassment because I got to chat with Chef Blais about his new restaurant, his time on Top Chef and his future restaurant plans. I even got to take a picture with him so we could commemorate the occasion. Thanks for always putting up with my shenanigans, Matt 🙂
Easy Instant pot hoisin glazed short ribs
This recipe is my take on a dish that was made on Top Chef! These chefs are LEGIT – they know of ingredients that I have never heard of and cooking techniques I wouldn’t have a clue as to how to even begin. So, with this recipe, I made sure to make it easily accessible to everyone (including myself)!!
Hoisin Short Ribs Glaze
- boneless beef short ribs
- carrots
- celery
- white onion
- hoisin sauce
- beef broth
- red wine
- tomato paste
- brown sugar
- olive oil
- fresh thyme
- salt and pepper
You only need one cooking device to make this – the Instant Pot! To make these Braised Short Ribs, you sear the meat in the Instant Pot and then pressure cook everything in there as well. Clean up is a breeze and the ingredients are (mostly) things you have on hand.
These Short Ribs taste fancy but don’t require fancy cooking. This is the perfect meal to impress your guests without being in the kitchen all day! Pair these Instant Pot Short Ribs with my Bacon Balsamic Brussel Sprouts and you have yourself an easy and fancy meal!
Tips for involving kids
- Have your kids help you dice the carrots, celery and onion.
- Let them measure out the ingredients and pour them into the Instant Pot.
- Have them be in charge of the Instant Pot buttons, with supervision of course. What kid doesn’t love pushing buttons?! (Please tell me I’m not the only one who has kids who fight over who gets to push the button!)
- There is always going to be a mess when you cook with your kids but, like my little guy Will (3 years old) says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Easy Instant Pot Hoisin Glazed Short Ribs
Equipment
Ingredients
- 2 lbs boneless beef short ribs
- 1 cup carrots peeled and diced
- 1 cup celery diced
- 1 cup white onion diced
- 1½ cups hoisin
- 2½ cups beef broth
- 1½ cups red wine
- 6 oz tomato paste
- ¼ cup brown sugar
- 2 Tbsp olive oil divided
- 6 sprigs fresh thyme
- salt and pepper to taste
Instructions
- Pat the short ribs dry with a paper towel and season with salt and pepper.2 lbs boneless beef short ribs, salt and pepper
- Turn Instant Pot to “Saute” for 10 minutes and add 1 Tbsp olive oil.2 Tbsp olive oil
- Sear the short ribs for 2 minutes on each side.
- Remove the short ribs and set them aside.
- Add the remaining 1 Tbsp of olive oil to the Instant Pot, along with the carrots, celery and onion.1 cup carrots, 1 cup celery, 1 cup white onion
- Saute the vegetables for 2-3 minutes and push them to the side of the Instant Pot.
- Add the tomato paste to the Instant Pot and brown for 2 minutes.6 oz tomato paste
- Pour in the red wine and reduce for 2 minutes.1½ cups red wine
- Add the short ribs back in, along with the hoisin, beef broth, brown sugar and fresh thyme.1½ cups hoisin, 2½ cups beef broth, ¼ cup brown sugar, 6 sprigs fresh thyme
- Set the Instant Pot to “High Pressure” for 45 minutes.
- After the ribs have cooked for 45 minutes, let the pressure release naturally for at least 10 minutes and then manually release any remaining pressure.
- Once cooked, remove the short ribs from the Instant Pot and serve warm.
