Red pepper hummus, melted mozzarella cheese, roasted mushrooms, peppers and zucchini all sandwiched between 2 slices of perfectly browned brioche bread. The Best Roasted Vegetable & Hummus Panini is quickly going to become your new favorite sandwich!
When Matt and I got to sneak away for a kid-free weekend Up North, we had to have (multiple) meals at one of our favorite spots along the North Shore – Coho Cafe. This place is so cute. I grew up going there with my family so it’s fun now to go with Matt and (when we take them with us!) our boys.
There are so many cute, locally owned restaurants and shops on the way up the north shore. I always have such a hard time deciding which ones we are going to stop at each time. Let’s just say, Coho Cafe almost always earns a spot for one of our meals!
This time around, we had lunch there and it definitely did not disappoint. I typically never order a vegetarian meal (even though I looooove vegetables), but this sandwich sounded too good to not order. It was so delicious, that it became the inspiration for this recipe.

It was a perfect combination of roasted vegetables and toasted bread with melty mozzarella cheese, and don’t for get the hummus, was so delicious! When I got home, I knew I had to get to work on recreating that panini because I literally couldn’t stop thinking about it.
So, for the next week, I had roasted veggie sandwiches for lunch every day until I finally perfected the recipe. And now, I’m sharing it with you! I hope you enjoy this sandwich as much as I do!!
Roasting the Veggies
Don’t skip this part! This may seem like a step that you could cut out, but don’t! Roasting vegetables brings out their flavor and makes this sandwich even more delicious.
You can roast the vegetables in the oven, on the stovetop or on the grill. Any one of these these options worlds great and definitely brings out the flavor.
If you opt for roasting the vegetables in the oven, I highly recommend roasting them at a minimum of 400 degrees, although I tend to set my oven to 450 degrees. This leaves the vegetables still a bit crunchy but with a nice char.
What Type of Hummus Should I Use?
My favorite type of hummus is roasted red pepper! You can use whatever type of hummus you would like but I think the red pepper flavor is the best. It tastes so delicious with the zucchini and the red peppers.

Tips for Involving Kids
- Let your kids help you cut up the vegetables with their very own knives.
- Have your kids help you assemble the paninis.
- Let your kids be in charge of assembling their own panini. I often find that my kids are much more willing to try something new when they make their own plate.
- There is always going to be a mess when you cook with your kids but, like my son Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!
The Best Roasted Vegetable and Hummus Panini
Equipment
Ingredients
- 8 slices of brioche bread
- 3 Tbsp olive oil divided
- 1 zucchini sliced
- 1 red bell pepper sliced
- 10 oz package portobello mushrooms sliced
- 8 oz package fresh mozzarella sliced
- 8 oz red bell pepper hummus
- salt and pepper to taste
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- Put the zucchini, red bell pepper and mushrooms on a sheet pan and drizzle with 1 Tbsp olive oil. Season with salt and pepper.3 Tbsp olive oil, 1 zucchini, 1 red bell pepper, 10 oz package portobello mushrooms, salt and pepper
- Roast the vegetables for 15 – 20 minutes.
- When ready to serve the paninis, heat a grill pan** over medium heat. Brush (or spray) the remaining olive oil on one side of the slices of bread.8 slices of brioche bread
- Put the olive oil side down into the pan and put 3 slices of mozzarella cheese one one slice of bread.8 oz package fresh mozzarella
- Place a cover on the grill pan and cook for 3-4 minutes to melt the cheese.
- Once melted, remove the sandwich from the heat and top the melted mozzarella with the roasted veggies.
- Spread 2 oz of the hummus on the other slice of bread.8 oz red bell pepper hummus
- Assemble the sandwich and ENJOY!!
