We had our first rainy day of the year and the boys were so excited (as was I)! There’s something so refreshing and relaxing about a good rain. When Will saw it was raining his first response was “Great, now it will wash the dirt off the deck”. Ummm, when did he turn into an adult?! And when did he start listening so closely to me? Noted.
After watching the rain from inside, we threw on our raincoats and boots and grabbed our umbrellas. The boys were ready for some puddle jumping and I was ready for them to get rid of some energy!

Jack and Will approach puddle jumping they same way they approach life. Jack assesses the situation before he jumps in. He usually lets Will go first and observes how high the water splashes to figure out if it will go over his boots. Will couldn’t be more different. He doesn’t even think twice before he (basically) cannonballs into the puddle.
Their personalities are so different but they compliment each other so well. Will pushes Jack out of his comfort zone and Jack reins Will in when he needs to be. It’s days like today, through our puddle adventures, where I couldn’t be more thankful for my two boys.
Nothing like some puddle jumping to really get you ready for a snack! I’ve always loved the idea of energy bites – a little snack that’s healthy and gives you a quick burst of energy sounds perfect. But, the consistency always gets me – I just haven’t liked the ones I’ve tried. So, I set out to make my own. That’s how The Best Energy Bites were born!
The Best Energy Bites Ingredients
- old fashioned oats
- almond butter
- honey
- chia seeds
- cocoa powder
- vanilla extract
- mini M&M’s
These Energy Bites are loaded with oats, almond butter and chia seeds. They are sweetened with a touch of honey and have the perfect amount of crunch from the addition of mini M&M’s. Make these today, you are going to love them!
How to Make the Best Energy Bites
Most recipes for energy bites, want you to roll them into little balls. While I love the size of a one bite energy ball, I don’t love the time it takes to make so many little energy balls.
My solution is to make flat energy bites. After I combine all of the ingredients, I put them on a parchment lined cookie sheet. Then, I put another piece of parchment paper over the mixture and roll it flat with a rolling pin. It’s easy, doesn’t make a mess and gets them super flat.
Pop the single layer into the freezer and let it freeze for a few hours. Then, take them out and break it up into bite size pieces. It’s an easy, no mess way to get that perfectly sized energy bite.
How to Store these Energy Bites
I think the best place to store these energy bites is in the freezer. They don’t freeze solid but get really cold and slightly chewy – they are so good! The fridge would work great, too, but I think the freezer takes it up a notch.

Tips for Involving Kids
- Let your kids help you measure out all of the ingredients. The measurements on this recipe don’t have to be precise, so it’s the perfect recipe to let them practice!
- Have your kids help you to flatten the energy bites. It’s a fun thing to do together – my boys love when I tell them to “put some muscle into it”!
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
The Best Energy Bites
Ingredients
- 2 cups old fashioned oats
- 1 cup almond butter
- 1/3 cup honey
- 2 Tbsp chia seeds
- 1½ tsp cocoa powder
- 1 tsp vanilla
- ¼ cup mini M&M’s
Instructions
- Combine all the ingredients (except the M&M’s) in a large bowl. Mix well to combine.2 cups old fashioned oats, 1 cup almond butter, 1/3 cup honey, 2 Tbsp chia seeds, 1½ tsp cocoa powder, 1 tsp vanilla
- Once mixed, pour the mixture onto a parchment lined cookie sheet.
- Place another piece of parchment paper on top of the oat mixture and use a rolling pin (or your hands!) to flatten the mixture into a thin layer.
- Sprinkle the M&M’s on top and push them down into the oat mixture.¼ cup mini M&M’s
- Place the cookie sheet in the freezer for an hour and then break into bite sized pieces.
- Store remaining energy bites in a sealed container in the freezer.
