  • 2 cups frozen peas thawed
  • ¼ cup olive oil
  • 1 lemon juiced
  • 1 garlic clove cut in quarters
  • salt to taste
  • pepper to taste

Instructions
 

  • Reserve ¼ cup peas for garnish.
  • In a food processor, pulse the sweet peas.

  • Add the remaining ingredients and blend until smooth, scraping the sides of the bowl as necessary. This process may take several minutes.
