The moment a pea is picked, the natural enzymes inside the vegetable begin converting the natural sugars into starch. This is why peas bought from the grocery store tend to be more starchy and less sweet.

So, unless you have a sweet pea plant growing in your backyard, frozen peas are the way to go. Frozen peas maintain their sweetness because they are blanched and flash-frozen right after they are picked.
