Heat the olive oil in a large skillet over medium heat.
½ Tbsp olive oil
Add the sweet potatoes and onion.
2 sweet potatoes, ¼ white onion
Cook, stirring occasionally, until the potatoes are lightly browned (around 10 minutes).
Add the bell pepper and cook for an additional few minutes.
1 red bell pepper
In a separate bowl, crack the eggs and scramble them.
4 eggs
Push the sweet potato mixture to the sides and pour the scrambled eggs into the middle of the pan.
Cook the eggs until your desired doneness and then mix everything together. Season with Lawry’s and sprinkle with parsley. Enjoy!
