This Sweet Potato Breakfast Scramble is the perfect healthy and filling breakfast. It is loaded with sweet potatoes, bell peppers, onion, parsley and scrambled eggs. This easy one pan dish is packed with all sorts of savory flavors and is the perfect start for your day!

  • Heat the olive oil in a large skillet over medium heat.
    ½ Tbsp olive oil
  • Add the sweet potatoes and onion.
    2 sweet potatoes, ¼ white onion
  • Cook, stirring occasionally, until the potatoes are lightly browned (around 10 minutes).
  • Add the bell pepper and cook for an additional few minutes.
    1 red bell pepper
  • In a separate bowl, crack the eggs and scramble them.
    4 eggs
  • Push the sweet potato mixture to the sides and pour the scrambled eggs into the middle of the pan.
  • Cook the eggs until your desired doneness and then mix everything together. Season with Lawry’s and sprinkle with parsley. Enjoy!
