  • Preheat oven to 375 degrees Farenheit.
  • In a large bowl, beat the butter until it is smooth and creamy.
    ½ cup butter
  • Add the white and brown sugar to the butter and mix until combined.
    ½ cup white sugar, ¼ cup brown sugar
  • In the same bowl, add the egg, almond extract, baking soda, salt and flour. Mix until combined.
    1 egg, 3 tsp almond extract, ½ tsp baking soda, ½ tsp salt, 1 cup flour
  • Stir in the chocolate chips and coconut.
    1 cup semi-sweet mini chocolate chips, 1 cup sweetened flaked coconut
  • Scoop spoonfuls of cookie dough onto a parchment lined cookie sheet.
  • Bake for 8-10 minutes until cookies are slightly brown around the edges.
  • Let the cookies cool on the cookie sheet for at least 5 minutes before enjoying.
