  • Heat the olive oil in a large skillet over medium heat.
    ½ Tbsp olive oil
  • Add the sweet potatoes and onion.
    2 sweet potatoes, ¼ white onion
  • Cook, stirring occasionally, until the potatoes are lightly browned (around 10 minutes).
  • Add the bell pepper and cook for an additional few minutes.
    1 red bell pepper
  • In a separate bowl, crack the eggs and scramble them.
    4 eggs
  • Push the sweet potato mixture to the sides and pour the scrambled eggs into the middle of the pan.
  • Cook the eggs until your desired doneness and then mix everything together. Season with Lawry’s and sprinkle with parsley. Enjoy!
