The Twins regular season is slowly winding down and Jack could not be more excited for the playoffs! The Twins had a super fun Fan Appreciation Day – complete with a drive thru celebration.
The boys absolutely loved it. Jack’s eyes reminded me of that emoji that has star eyes. Will was super excited too but he was NOT a fan of the traffic. There was a lot of “Can these cars just move ALREADY?!”
While weren’t able to get out of the car, it was still so fun to be able to GO to an event. It seemed like a little taste of normalcy amongst the chaos we currently find ourselves in.

My Cranberry Apple Salad is the fall salad you never knew you needed, until now. Crisp apples, tangy cranberries, feta cheese, walnuts and a creamy yogurt based dressing all sit on top a bed of arugula. This salad is seriously delicious.

Honeycrisp. Hands down. This apple was created right here in Minnesota and is my favorite apple ever. It’s the perfect combination of sweet and tart with the perfect crunch. Honeycrisp apples are perfect for eating, baking, or topping salads.

What Type of Lettuce Should I Use?
I am always partial to arugula because it is so flavorful. It has a slight peppery flavor to it that gives it a really unique flavor that blends perfectly with the toppings and dressing on this salad. If you can’t find arugula, pretty much any type of lettuce would work!
Tips for Involving Kids
- Let them help you slice the apples and assemble the salads.
- Have them help you assemble the wraps – they can choose how many veggies they want in their wrap.
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Cranberry Apple Salad with a Creamy Vinaigrette

Salad Ingredients
- 6 cups arugula
- 3 Honeycrisp apples sliced
- ½ cup dried cranberries
- ½ cup crumbled feta cheese
- ½ cup chopped walnuts
Dressing
- 1 cup plain greek yogurt
- ¼ cup apple cider vinegar
- 2 Tbsp grey poupon mustard
- 2 Tbsp honey
- salt to taste
Instructions
To Make the Dressing
- Whisk all ingredients together in a bowl (or shake together in a jar) until combined.1 cup plain greek yogurt, ¼ cup apple cider vinegar, 2 Tbsp grey poupon mustard, 2 Tbsp honey, salt
- Use immediately or refrigerate.
To Make the Salad
- Combine all ingredients in a large salad bowl and toss until combined.6 cups arugula, 3 Honeycrisp apples, ½ cup dried cranberries, ½ cup crumbled feta cheese, ½ cup chopped walnuts
