Crockpot Beef Bowls with Carrot Ginger Slaw
These Crockpot Beef Bowls are flavorful, crunchy and easy to make. They are made with deliciously shredded beef, rice, broccoli slaw, pickled onions and drizzled with a carrot ginger miso dressing.
Matt and I had the incredible opportunity to travel to the Big Island, by ourselves, for 12 days! We are beyond lucky to have two sets of grandparents (who live close) who are willing to watch Jack and Will so Matt and I can have this time together.
The flight from Minnesota to Hawaii is long. But, when you don’t have kids to entertain, it is a blissful 10 hours spent reading, napping and watching movies.
One of my favorite things that we were able to do there was hike to see an active volcano! We actually had no idea that there was an active volcano flow, so you can imagine our surprise when we saw something glowing red in the pitch black sky.
The next morning, we decided to wake up extra early and head to Hawaii Volcanoes National Park. We left our place around 4:30am and got to the National Park before dawn. The hike back to the volcano was insane – it felt like we were literally walking through hell. The smell of ash, super foggy (all you could see were the outlines of trees) and just overall really eerie.
We turned a corner and, all of a sudden, saw the glowing red lava. It was incredible – it literally took our breath away. If you have a chance to see an active lava flow, I highly recommend it! It is an other-worldly experience that I am so glad I got to be a part of.
We also got to go on some incredible hikes. One such hike was down the side of a mountain to get to this incredible beach. Most people hiking (either up or down) had on hiking boots and poles to help them along the way. The majority also wore a camelbak filled with water. But, not Matt and I. We wore flip flops, carried down two enormous chairs and a cooler filled with beer (and a few waters)!
We got a lot of looks as we went down the mountain but we got a lot of wishful stares as we sat in our chairs and cracked open our beers!
We also got to have an incredible relaxing on a catamaran and snorkeling. It was such an incredibly fun experience. There really isn’t anything better than been out on the water, with the wind whipping through your hair as dolphins jump in the distance.
Needless to say, we had an absolutely incredible trip and came back rejuvenated and ready to see our boys!

What Type of Steak Should I Use?
Traditionally, flank steak is used in Mongolian Beef. The beef is sliced and results in larger pieces of meat. If you would like to prepare this recipe traditionally, just slice up the flank steak prior to putting the meat in the crockpot.
If you want to make this recipe extra easy, I recommend using a boneless beef chuck roast. You put the meat in whole and then, after it has cooked completely, you shred the beef and add it back to the crockpot. No slicing required!

Crockpot Beef Bowls with Carrot Ginger Slaw
Ingredients
- Crockpot Mongolian Beef
- 2 cups brown rice cooked
- ½ red onion thinly sliced
- ½ cup apple cider vinegar
- 1 tsp white sugar
- 10 oz broccoli slaw
- ½ cup Carrot Ginger Miso dressing Trader Joe’s brand
Instructions
- Make the Crockpot Mongolian Beef.Crockpot Mongolian Beef
- When the beef is done cooking, shred it and leave it in the juice.
- Make the rice according to the package directions.2 cups brown rice
- While the rice is cooking, thinly slice the onions and combine them in a mason jar with the apple cider vinegar and sugar.½ red onion, ½ cup apple cider vinegar, 1 tsp white sugar
- Shake the mason jar and let sit for at least 5 minutes.
- Empty the broccoli slaw into a large bowl and add the Carrot Ginger Miso dressing. Stir well to combine.10 oz broccoli slaw, ½ cup Carrot Ginger Miso dressing
- When ready to eat, assemble the Crockpot Mongolian Beef Bowls with the rice on bottom, then shredded beef and topped with the slaw and pickled onions.
