Easy Chimichurri Sauce
This Easy Chimichurri Sauce is a delicious combination of parsley, cilantro, garlic, red wine vinegar and olive oil. Seasoned with red pepper flakes and salt, it is a flavorful and colorful addition to any meal.
This past year has been a doozy – there is no denying that! Jack has worked so incredibly hard at home with Distance Learning. Will has had to stay cooped up in our house when he would rather be talking to anyone and everyone. The boys, along with us, have sacrificed so much this past year. Matt and I decided that we wanted to surprise them for all their hard work and take them to a Twins game!
If you have read any of my other blog posts, you know that Jack and Will are (kind of) Twins fans. And by kind of, I mean they are obsessed. So, before they totally reopened the stadium to all the fans, we decided to go all out and get 8th row tickets on the first baseline.
We showed up early and the boys’ jaws dropped to the floor when they got to go up to the edge of the field and saw Buxton, Cruz and Astudillo warming up a mere 15 feet away. The look in Jack and Will’s eyes was worth every penny we spent on candy at the stadium that day!
As if it wasn’t special enough to just BE at Target Field, Jack caught a ball. And not just any ball – a ball thrown by Max Kepler! But, it took a bit before it actually got to him. Let me explain. When Jack cheers, Jack CHEERS. Like every minute, he is saying something to support the Twins. Everyone within earshot can tell that Jack is a true baseball fan.
In the third inning, Kepler caught a pop fly and threw it up in the stands. A high school kid caught and walked it over to give it to a middle schooler. The boy that he gave it to had already caught a ball from Astudillo, so then he got up and walked the ball over to Jack! Jack’s face was absolutely priceless. A gigantic parma-smile that couldn’t be wiped off.
It was the cutest thing ever to see all these kids passing on the ball to someone they thought would appreciate it more. I think the crowd was louder in appreciation of these gestures than it was when Kepler scored a home run!
Needless to say, Jack brought that ball home and slept with it. He literally cradled it up to his cheek and fell asleep with a smile on his face. If you just read all of this and wondered how Will was feeling about not getting his own ball, not to worry. Will ate his weight in candy and was perfectly content!

The Origin of Chimichurri
Chimichurri sauce originates from Argentina and is used both as and ingredient and as a sauce. Traditionally, the main ingredient is finely chopped parsley. Chimichurri is a versatile sauce that can be used with everything from vegetables to steak to fish.
How to Make Chimichurri Sauce
- Finely chop the parsley and the cilantro. You can blend the ingredients if you would like, but if you prefer the traditional way, stick to a cutting board and a knife.
- Mince the garlic.
- In a bowl, combine the parsley, cilantro and garlic.
- Add the olive oil, red wine vinegar, red pepper flakes and salt.
- If you prefer things spicier, you can add more red pepper flakes.
How Long Does Chimichurri Stay Good?
This Easy Chimichurri Sauce will stay good in the fridge for up to a week. The flavors will continue to meld together and become even more delicious!

Easy Chimichurri Sauce
Equipment
Ingredients
- ½ cup parsley finely chopped
- ¼ cup cilantro finely chopped
- 3 cloves garlic minced
- ½ cup olive oil
- 2 Tbsp red wine vinegar
- ½ tsp red pepper flakes
- 1 tsp salt
Instructions
- Combine all ingredients in a small bowl.½ cup parsley, ¼ cup cilantro, 3 cloves garlic, ½ cup olive oil, 2 Tbsp red wine vinegar, ½ tsp red pepper flakes, 1 tsp salt
- If time allows, refrigerate prior to using (this allows the flavors to combine).
- This Chimichurri will stay good for up to 5 days in the fridge.
