Ham & Swiss Egg Bites

I love cooking. I mean I did start a cooking blog, so I should love cooking – right?! But, in the midst of this pandemic and feeding three square meals EVERY day to Matt, Jack and Will, I’m wanting some easy recipes.
Jack and Will eat three adult-sized meals a day and then graze alllll day in between meals. They are literally always eating. I have NO idea how we are going to survive their teenage years ?

These Ham & Swiss Egg Bites are a HUGE hit in our house – Jack and Will sometimes sit down and eat 3 or 4 in one sitting (have I mentioned that they eat a lot)?! If you can’t finish them all at one time like my boys, these egg bites freeze really well, too. You can just pop them in the microwave to heat them up.
Some liquid will come out of them as they heat, but I just put a paper towel underneath the egg bite to absorb the moisture. I hope this is an easy breakfast (or dinner!) that is a crowd-pleaser in your house!
Let’s Talk Muffin Tins
If you have ever made eggs in a muffin tin, you know the pain that comes with cleanup. I can’t tell you how many times I forgot to spray the tin BEFORE putting in the eggs. The result? An utter disaster that needs to be soaked and scrubbed, over and over. I knew there had to be an easier way. And then I found this muffin tin. Gone are my days of scrubbing!! This muffin tin is made out of silicone and requires NO spraying. The egg bites literally pop right out, leaving no residue. I immediately got rid of all my other muffin tins. Run and get it. You won’t regret it!

Tips for Involving Kids
- Let your kids dice up the ham with their very own knives.
- Have them help you divide the ham and cheese between the muffin cups.
- If you are feeling extra adventurous, let them be in charge of the baster!
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Ham and Swiss Egg Bites
Ingredients
- 10 eggs
- ½ cup skim milk
- ½ pound ham diced
- 1 cup swiss cheese shredded
- salt and pepper to taste
Instructions
- Preheat the oven to 375 F.
- Crack the eggs into a bowl and add the milk.10 eggs, ½ cup skim milk
- Whisk until well combined. Sprinkle with salt and pepper.salt and pepper
- Evenly divide the ham and the cheese between the 12 muffin cups.½ pound ham, 1 cup swiss cheese
- Using a turkey baster, evenly divide the egg mixture between the 12 muffin cups.
- Bake for 15 minutes, or until the eggs are completely set.
- Enjoy them right out of the oven, or cool and freeze for later.
