This Healthy Cherry Chicken Pasta Salad is made with gemelli pasta, shredded chicken, dried cherries, crunchy celery, California walnuts and topped with a sweet and tangy dressing.
My husband has a VERY hard time getting out of bed in the morning. Sorry Matt, I just called you out on the internet! If I am feeling extra nice, I will help him out in the morning by making an easy grab it on the fly lunch. This Cherry Chicken Pasta Salad is perfect for weekday lunches. I keep the dressing separate so that the pasta doesn’t get soggy and it will last longer in the fridge.

What Makes this Cherry Chicken Pasta Salad Healthy?
This recipe uses a lot less mayonnaise than a typical chicken salad. Instead of having the dressing just mayo-based, the mayo is combined with apple cider vinegar. This gives it a deliciously tangy taste and vinegar has many health benefits.
How to Make Cherry Chicken Pasta Salad
- Combine all of the dressing ingredients in a small bowl.
- In a separate larger bowl, combine the pasta, chicken, celery, walnuts and dried cherries.

In this recipe, I love to use gemelli pasta. If you are unfamiliar with gemelli pasta, it is a little more dense and substantial than your typical noodle. But, if you can’t find gemelli pasta, you can substitute pretty much any type of noodle. Penne or rotini would be great alternative options.

Ingredients
Pasta Salad
- ½ lb gemelli pasta noodles
- ½ cup celery chopped
- ¾ cup shredded chicken
- ½ cup walnuts chopped
- ½ cup dried cherries
Dressing
- ½ cup light mayonnaise
- ¼ cup apple cider vinegar
- 1 tsp onion salt
- ½ tsp garlic powder
- 1 tsp ground mustard
- 3 Tbsp sugar
- ½ tsp salt
- ½ Tbsp poppy seeds
Instructions
- In a large bowl, combine all of the pasta salad ingredients.½ lb gemelli pasta noodles, ½ cup celery, ¾ cup shredded chicken, ½ cup walnuts, ½ cup dried cherries
- In a separate smaller bowl, mix together all of the dressing ingredients.½ cup light mayonnaise, ¼ cup apple cider vinegar, 1 tsp onion salt, ½ tsp garlic powder, 1 tsp ground mustard, 3 Tbsp sugar, ½ tsp salt, ½ Tbsp poppy seeds
- When ready to serve, pour the dressing on the pasta salad and mix well.
Seems like a lot of sugar – I’m thinking could substitute with honey or cut back on the sugar.

Are the dressing measurements accurate? This was extremely tart with 1/2C apple cider vinegar. I ended up adding more mayo because it was far too acidic.
