30 Minute Instant Pot White Chicken Chili
This 30 Minute Instant Pot White Chicken Chili has a slightly spicy broth that is made creamy with Greek yogurt and loaded with chicken and beans. It’s the perfect quick and cozy dinner.
We just took the boys on a trip to Kauai! Matt and I originally went to Kauai for our honeymoon (10 years ago!!) and now we were able to bring our boys back! And, let me tell you, those two trips were verrrrrry different.
On our childless Hawaii trip, I left feeling refreshed and rested. I’m leaving this Hawaii trip feeling like I need a nap?! If you have kids, you can understand my sentiment. When you travel with your kids, without your kids, you are on a vacation. When you travel with your kids, its a trip. There is a definite distinction!
We had so much fun beach hopping, exploring the island, watching whales, swimming in the pool, chasing waves and eating shave ice. It was one of those trips where you do NOT want to head back home.

You especially don’t want to head back home when you hear that the feel like temperature is -30. I mean, really?! We just left Kauai and spent our last day on the beach watching whales from the shore and soaking in the glorious 80 degrees of sunlight that was warming our far too pale skin.

I feel like chili is always a perfect hearty, mid-winter meal. It’s cozy, warm and filling – 3 perfect words for those short winter days. This White Chicken Chili is a lightened-up version that is made with Greek yogurt. It can be made in a matter of 30 minutes in your Instant Pot, so you can get it on the table quickly. 30 minute Instant Pot White Chicken Chili Ingredients
- boneless skinless chicken breasts
- olive oil
- white onion
- garlic
- Great Northern Beans
- mild green chilies
- chicken broth
- cumin
- oregano
- plain non-fat Greek Yogurt
- shredded Monterey Jack Cheese
Tips for involving kids
- Let your kids pour all of the ingredients into the Instant Pot.
- Have your kids be in charge of pushing all the buttons on the Instant Pot – this is a coveted position in our house!
- There is always going to be a mess when you cook with your kids but, like my little guy Will (3 years old) says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
30 Minute Instant Pot White Chicken Chili
Ingredients
- 2 lbs boneless skinless chicken breasts
- 1 Tbsp olive oil
- ½ white onion diced
- 4 cloves garlic minced
- 2 cans Great Northern Beans drained and rinsed
- 4 oz can mild green chilies
- 4 cups chicken broth
- 2 tsp cumin
- 1 tsp oregano
- 1 cup plain non-fat Greek Yogurt
- 2 cups shredded Monterey Jack Cheese for serving
- salt and pepper to taste
Instructions
- Select “Sauté” on the Instant Pot and set the timer for 5 minutes. Let the Instant Pot heat for 2 minutes and sauté the onion and garlic in the olive oil for 3 minutes.1 Tbsp olive oil, ½ white onion, 4 cloves garlic
- Pour the beans (drained and rinsed) and the green chilies (NOT drained) in the Instant Pot.2 cans Great Northern Beans, 4 oz can mild green chilies
- Add the chicken broth, cumin, oregano and chicken to the Instant Pot.4 cups chicken broth, 2 tsp cumin, 1 tsp oregano, 2 lbs boneless skinless chicken breasts
- Put the lid on and turn the valve to the “sealing” position. Select “High Pressure” and set the timer for 20 minutes.
- Let the pressure release naturally for at least 10 minutes and then manually release any remaining pressure.
- Remove the chicken to shred and put back into the Instant Pot.
- Stir in the Greek yogurt and top with cheese.1 cup plain non-fat Greek Yogurt, 2 cups shredded Monterey Jack Cheese
