Raspberry Muffins with an Easy Streusel Topping
The BEST Muffins – yes, I said it. These Raspberry Muffins with an Easy Streusel Topping are light and buttery with tangy raspberries and a sweet and crunchy streusel topping.
You know when people have that one thing they always make that they become known for? I’m talking about the cookies that melt in your mouth, or the steak that is packed with flavor and grilled to perfection or the scones that are so flaky but also perfectly moist – that one thing a person makes so well that they almost become synonymous with?
Well, these Raspberry Streusel Muffins are just that for my mom.
Now, I can’t take credit for this recipe but I can take credit for eating hundreds of these muffins growing up (I don’t even think that’s an exaggeration) and, let me tell you, they are GOOD! My parents have a big raspberry patch in their garden and we would pick buckets and buckets of fresh raspberries daily.

Baking is Connection
My mom is an incredible baker. She taught me everything I know about cooking but crushes me when it comes to baking (although I do make these cookies better than her – ha)!
She is always so creative when it comes to baking – whether it is making chocolate trees as pie toppers (she just did this for Christmas) or making a perfectly latticed cherry pie with leaf cutouts on top (she just did this for Thanksgiving) or making these amazing muffins – my mom is so talented!
When I was little, I would always help my mom bake. I remember watching her do the exact same thing that I was doing but she would do it ten times faster and ten times better. I was always in awe of her and would think “how in the world can she do that?!

These muffins have a nice fluffy texture that is perfectly balanced with fresh, sweet raspberries. They are topped with a pecan streusel that makes the whole muffin, quite literally, perfection. These muffins are best enjoyed straight out of the oven – smear on some butter if you are wanting an extra special treat!

Tips for Involving Kids
- Have your kids help you measure out all of the ingredients.
- Let them be in charge of the mixer – my boys LOVE this job!
- I like to scoop the batter (it can get REAL messy REAL fast) and then let the boys put the raspberries on top of the batter!
- There is always going to be a mess when you cook with your kids but, like my little guy Will (3 years old) says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Raspberry Muffins with an Easy Streusel Topping
Equipment
Ingredients
Muffin Batter
- 1 ½ cup white flour
- ½ cup white sugar
- 2 tsp baking powder
- ½ cup skim milk
- ½ cup butter, melted
- 1 egg
- 1 cup raspberries, fresh or frozen
Streusel Topping
- ¼ cup pecans, chopped
- ¼ cup brown sugar
- ¼ cup white flour
- 2 tbsp butter, melted
Instructions
- Preheat the oven to 350 degrees F.
- Mix the muffin batter dry ingredients together first.1 ½ cup white flour, ½ cup white sugar, 2 tsp baking powder
- Add the wet ingredients and mix to combine.½ cup skim milk, ½ cup butter, melted, 1 egg, 1 cup raspberries, fresh or frozen
- Spoon 1-2 Tbsp into each muffin tin. Place 2-3 raspberries on top of that batter.
- Evenly divide the remaining batter amongst the muffin tins.
- Top with remaining raspberries.
- Combine the streusel ingredients and evenly top the muffin batter.¼ cup pecans, chopped, ¼ cup brown sugar, ¼ cup white flour, 2 tbsp butter, melted
- Bake for 30-35 minutes until the muffins are golden brown.
