Chicken Gyros with Homemade Tzatziki (made in the crockpot)
Easy Chicken Gyros with Homemade Tzatziki (made in the crockpot) are made with deliciously shredded chicken in warmed naan. They are topped with a bright and fresh tzatziki, tomatoes, onions and cucumbers.
A few weeks before school started, we found out some scary news about Jack. We had been playing baseball (typical) and he was running to first base and totally collapsed (not typical).
We rushed him to the ER and found out that he had fractured his spine. Poor buddy had to wear a back brace and severely limit his activity level. As you can imagine this is very difficult for a kid, much less an extremely active kid.
He was, understandably, having a very difficult time so we decided that we all needed a little change of scenery. Thanks to some super cheap last minute flights and Matt’s incredible googling abilities, we headed to Estes Park Colorado before school started.
Matt found the cutest little cabin right on a trout stream. There were mountains in the backdrop and wildflowers blowing in the breeze along the stream. It was absolutely perfect – just what we all needed.
The trout fishing was absolutely incredible! Will caught a trout on his first three casts. The kid might only be five, but holy smokes he can fish! Matt definitely taught him well – Will can look at the stream and read the water to determine the best place to cast his fly.
While Will doesn’t have a ton of patience in every day life, he is insanely patient when trying to catch a trout. The student definitely out-fished the teacher on this trip!
Estes Park is absolutely beautiful! We were only five minutes outside of Rocky Mountain national Park so we were able to take some incredible hikes!
We saw a ton of wildlife and the vantage points were breathtaking. I highly recommend a trip out to Estes Park and Rocky Mountain National Park if you ever get the chance.
Crockpot Chicken
Let’s first talk about the Greek Chicken Marinade. It’s so good and you can make it ahead of time. I call it a marinade but you don’t technically have to marinade the chicken. It’s more of a cooking liquid (but is just as great if you marinade it first). The amazing smells will fill your home and the chicken will be perfectly shreddable when it’s done. Here’s what you need to make the marinade. Don’t forget the chicken!
Chicken Gyro Marinade
- red wine vinegar
- olive oil
- garlic
- white onion
- lemon
- chicken broth
- dried oregano
- salt and pepper
Homemade Tzatziki
Whenever I think of Greek food, tzatziki ALWAYS comes to mind. If you aren’t familiar with it, tzatziki is a yogurt based sauce. The Greek yogurt is traditionally combined with cucumber, garlic and dill. It is so good and (I think) delicious on pretty much everything. This Homemade Greek Tzatziki Sauce is really easy to make because you just toss everything into a blender and let it rip!
Homemade Tzatziki Ingredients
- plain nonfat greek yogurt
- english cucumber
- garlic
- fresh dill
- lemon
- olive oil
- salt
What Goes into Crockpot Chicken Gyros?
Besides the chicken (obviously can’t forget that since it’s in the name!), you NEED to make the Homemade Greek Tzatziki Sauce. The sauce is so flavorful and super easy to make. It definitely makes the gyros even more delicious.
I love using mini naan as the holding vessel for these Greek Chicken Gyros. You can find many different variations of naan at your local grocery store. But, make sure you heat up the naan a bit before you serve these gyros. Whether you pop it in the microwave or heat it in the oven, just warming it makes it taste delicious.
As far as other toppings for these chicken gyros, I highly recommend having tomatoes and red onions. In addition, you can add cucumbers. Although, these aren’t as necessary since you will already get a lot of cucumber flavor from the tzatziki.

Tips for Involving Kids
- With your supervision, have your kids help you measure out all of the ingredients.
- Let your kiddo be in charge of pushing the buttons on the Instant Pot – this is always a coveted job.
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!
My TV Debut
Every year, I put on a St. Jude fundraiser in honor of my little brother Mikey. This year, I decided to go big and have an in person cooking class. It turned out to be a huge success! We cooked these Chicken Gyros, made Mini Fruit Pizzas, jumped in bouncy houses and toured private jets (yes, we really did this)!
In the week leading up to the big event, I got to make my big tv debut on WCCO news and Fox9 Good Day! I not only got to promote my cooking class and fundraiser, but I also got to do a cooking demo on live tv. You can watch the Fox9 segment here.
