Instant Pot Shredded Chicken
The easiest way to make shredded chicken! Throw all the ingredients together and let your Instant Pot do all the work. This Instant Pot Shredded Chicken is the perfect way to add protein to any meal.
Life with kids can sometimes be a bit chaotic. It can get easy to get bogged down by jobs, kid activities, daily routines, bedtimes and the never-ending to do lists. Matt and I always try to make it a priority to carve out time for just the two of us.
Whether that is watching a movie together after the boys go to bed or going out for a date night – we try to make time together a priority. This past weekend, we got super lucky and were able to have a whole weekend away! My parents watched the boys for the weekend (thanks again Mom and Dad!!) and Matt and I got to go to Lutsen for the whole weekend.
We got to sleep in (if you have young kids, you know how magical this is), go cross country skiing, eat out, relax, read books, go to concerts and just spend some much needed time together.

It was so great! And, to top it all off, we came home to some very happy boys that had an awesome weekend with their grandparents! It was a win-win for everyone!
To help with our busy weeknights, I love having shredded chicken on hand at all times. I keep a bag of it in the freezer so that I can pull it out when I want to add it to salad, soup, pasta, you name it. It’s the perfect thing to quickly turn a dish into a main course. Plus, you can make it in your Instant Pot so it is ready in under 20 minutes!
I always used to buy a whole rotisserie chicken and then pick all of the white meat off and shred it (we don’t care for dark meat). I loved having the shredded chicken on hand but I really didn’t like deconstructing the chicken, or wasting the dark meat. So, I created this recipe!
How to Store Shredded Chicken
Whenever I make this recipe, I often double it. I keep some in the fridge, that will get used in the next couple of days, and then I freeze the remainder. It works best if you freeze it flat in some storage bag. Then, when you would like to use some of it, you can just break off however much you want.
Can I Use Frozen Chicken?
You sure can! The only difference between using fresh and frozen chicken is that you will need to cook it in the Instant Pot longer. With fresh chicken, it only needs 13 minutes to cook. With frozen chicken, you will need to cook it for 16 minutes.

Tips for Involving Kids
- Let your kids pour the chicken broth into the Instant Pot.
- Have your kids help you measure out the dry ingredients.
- Let your kids push the buttons on the Instant Pot – what kid doesn’t like pushing buttons?!
- There is always going to be a mess when you cook with your kids but, like my little guy Will (3 years old) says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
