Sometimes being a parent means convincing your kid to do something you know they don’t want to do but you know will be good for them. This winter, that was basketball for Jack. The kid loves baseball. Lives and breathes it. But we don’t want him to only play baseball (he is only 10 after all).

Really, the only differences are that you make the spread from scratch (it makes a difference, believe me!) and use a panini press to toast the panini.

- ½ cup mayonnaise
- ½ tbsp olive oil
- ½ tsp dried oregano
- ¼ tsp dried basil
- ¼ tsp dried thyme
- ½ tsp salt

Italian Panini
- 1 loaf ciabatta bread
- 6 slices deli ham
- 4 slices genoa salami
- 4 slices deli pepperoni
- 4 slices tomato
- 2 pepperoncini peppers sliced
- ¼ tbsp olive oil
Homemade Aioli
- ½ cup mayonnaise
- ½ tbsp olive oil
- ½ tsp dried oregano
- ¼ tsp dried basil
- ¼ tsp dried thyme
- ½ tsp salt
Instructions
- In a small bowl, combine all of the ingredients to make the Homemade Aioli. Set aside and refrigerate (several days ahead of time if needed).½ cup mayonnaise, ½ tbsp olive oil, ½ tsp dried oregano, ¼ tsp dried basil, ¼ tsp dried thyme, ½ tsp salt
- Cut the bread in half and slice it lengthwise.1 loaf ciabatta bread
- Brush the remaining olive oil on the outside of the bread.¼ tbsp olive oil
- Spread the Homemade Aioli on the inside of the bread and add the remaining ingredients.6 slices deli ham, 4 slices genoa salami, 4 slices deli pepperoni, 4 slices tomato, 2 pepperoncini peppers
- Place Panini on Panini Grill and cook until all sides are brown and crispy.
