Summer in Minnesota is truly the best. It’s why we all endure those arctic winters – the promise of summer. Since MN is the Land of 10,000 Lakes, there’s no better way to celebrate summer than by being out on the water.
Jack and Will have always liked fishing but, this year, it’s a WHOLE different level. Matt is beyond excited about this. If we are at my parents (who live on a lake) or at my in-laws cabin, all they want to do is fish!
It’s pretty fun seeing them bait their own hook, cast it out, hook a fish, reel it in and take it off all on their own. Will sometimes needs a little help but Jack has pretty much mastered all of these steps. Matt could not be more thrilled that he has two fishing protégés!
Will sometimes misses fishing so much that he practices casting in the driveway – I kid you not. Matt tied a weight to his line so he could “get super great at casting” (Will’s words)! All that driveway practice has helped him become quite the caster!

Fishing does something to Will. He normally has a non-stop motor (both his body and his mouth!) and fishing somehow magically calms him. He could literally fish for hours on end (there are usually tears when we need to wrap it up) and he is so incredibly focused.
When we are at the cabin, we often take the boys out on the pontoon to fish. While they could fish all day long, they always need to take snack breaks! I like to switch it up from time to time, but this Black Bean and Mango Salsa is an all-time favorite.

Can I Make this Salsa Ahead of Time?
Yes! And, frankly, I would recommend it. Making the salsa a night or two prior to eating it, allows all of the flavors to meld together and become extra delicious. Plus, eating it cold makes it the perfect refreshing and light summer snack.
What Chips Should I Use with this Salsa?
While you can use any type of chips that you like (or can find), I highly recommend using these. Between the crunch, the saltiness and the hint of lime (I bet you can guess what type of chips I’m referring to), they are the perfect compliment to this Black Bean and Mango Salsa.

The Best Black Bean and Mango Salsa

Ingredients
- 2 – 15 oz cans Del Monte diced mangos drained
- 1 – 15 oz can black beans drained and rinsed
- 1 cup frozen corn thawed
- ½ cup red bell pepper diced
- ¼ cup red onion diced
- ½ cup cilantro
- juice of 1 lime
- packet of Good Seasons Italian dressing
- chips for serving
Instructions
- Drain and rinse the black beans.1 – 15 oz can black beans
- Drain the mangos.2 – 15 oz cans Del Monte diced mangos
- In a large bowl, combine all of the ingredients and stir to combine.1 cup frozen corn, ½ cup red bell pepper, ¼ cup red onion, ½ cup cilantro, juice of 1 lime, packet of Good Seasons Italian dressing
- If possible, refrigerate for at least 30 minutes before serving to let the flavors meld together.
