When I make shredded chicken, I like to freeze it in a single, thin layer in a ziploc bag. This way, I can easily break off what I need and quickly reheat it.
If you know me, you know that I am a Type A planner through and through (so those statements probably didn’t come as a surprise to you)!
Now that we are in the midst of this pandemic, meal planning has lost a little bit of it’s luster for me. It definitely feels like more of a chore.
I don’t know if that’s because there are certain things that aren’t in stock at the grocery stores, or that I don’t order groceries as often now as I did before, or just the fact that we are in the midst of a GLOBAL pandemic, but it seems stressful now.
I can only imagine I am not the only one in this boat, so that’s why I created this blog post (for you AND me). All of these recipes use rotisserie chicken (that you can make ahead of time and store in your freezer); this makes mealtime a whole lot easier.
why rotisserie chicken?
I have always been able to get chicken at the grocery store, so all of these recipes are going to include shredded chicken. Plus, I think of all proteins, chicken seems to be the most well liked by kids and adults.

Ok, now that you have your shredded chicken made, let’s take a look at all of the recipes where you can use it! I’ve compiled a lot of options for you all.
