Grilled Chili Lime Shrimp with Mango Salsa
Juicy shrimp are marinated in lime, olive oil, garlic and chili powder and then grilled to perfection. While the shrimp are delicious on their own, they taste even better served with a quick and easy mango salsa. You are going to love this Grilled Chili Lime Shrimp with Mango Salsa!
My family loves eating shrimp and I love making it! Shrimp is a great healthy protein that can be made in so many different ways. With this recipe, don’t let the “Chili Lime” scare you off – I use mild chili powder so it just gives it a nice smokiness and flavor without the heat (Remember how I live in Minnesota? My family can only handle “MN Spicy”!).

Grilled Chili Lime Shrimp
But, with that being said, you can also just as easily make this dish spicy if you prefer! All you have to do is substitute regular chili powder for the mild chili powder called for in the recipe. Whether you prefer mild or spicy, you can adjust this dish based on your preferences.
Grilled Chili Lime Shrimp with Mango Salsa
This is a great recipe for a quick weeknight dinner. You can whip up this marinade in less than five minutes and the shrimp only need to marinate for about 30 minutes. In fact, if you marinate it for too long, you will “cook” the shrimp in the lime juice (aka you just made yourself some ceviche)! If you are wanting to really plan ahead, you can always make the marinade ahead of time and then just immerse the shrimp in the marinade while you are prepping the mango salsa.
Since people have limited access to ingredients and cooking methods right now, these shrimp would be just as delicious if you cooked them on the stove-top. Plus, it will make this dinner an even quicker one to make (you don’t have to spend time putting them on skewers)!

Mango Salsa – Fresh or Canned Mangoes?
I love all different kinds of mangos – fresh, canned, frozen, in sweet desserts, in savory dishes – you say “mango” and I come running! In this recipe, I think using canned mangos is the way to go, especially these ones from Del Monte. They have a really nice texture for salsa and are insanely sweet. Plus, all you have to do is open the can – no peeling required!

Tips for Involving Kids
- Let your kids measure out the ingredients for the shrimp marinade.
- Have them help you cut up the mangoes using these knives (although fair warning, you may have to cut a lot more mangoes if your kids are helping because Will consumed waaaaay more than he cut)!
- There is always going to be a ness when you cook with your kids but, like Will always says, “It’s okay Mom – chefs make messes and then they clean them up.” Have fun cooking with your kids!
Grilled Chili Lime Shrimp with Mango Salsa
Ingredients
Shrimp Marinade
- 5 lbs shrimp
- 2 limes juiced
- 2 cloves of garlic minced
- 2 Tbsp olive oil
- 1 tsp mild chili powder
- ½ tsp salt
- ¼ tsp pepper
Mango Salsa
- 15 oz can Del Monte Diced Mangos drained
- 2 Tbsp cilantro chopped
- 2 Tbsp red onion diced
- ½ lime juiced
- ½ tsp salt
Instructions
- In a large bowl, mix together the ingredients for the shrimp marinade.2 limes, 2 cloves of garlic, 2 Tbsp olive oil, 1 tsp mild chili powder, ½ tsp salt, ¼ tsp pepper
- Add the shrimp and marinate for 30 minutes (if the shrimp are frozen, thaw them first).5 lbs shrimp
- While the shrimp are marinating, combine all the ingredients for the mango salsa and stir to combine.15 oz can Del Monte Diced Mangos, 2 Tbsp cilantro, 2 Tbsp red onion, ½ lime, ½ tsp salt
- When the shrimp are done marinating, thread them onto skewers.
- Grill for 2-3 minutes on each side or until the shrimp are pink (if you don’t have access to a grill, you can just cook them on your stovetop).
- Serve the shrimp with the mango salsa and a side of brown rice.
