Crockpot Salsa Verde Chicken Tostadas
These Salsa Verde Chicken Tostadas are packed with flavor and are easily made in the crockpot. A crispy tortilla is topped with refried beans, salsa verde shredded chicken, cotija cheese, pickled onions and cilantro. The perfect bite of crunchy, savory and salty!
We signed both of the boys up for soccer this summer. They were both really looking forward to it since it was Will’s first time playing and Jack hadn’t been able to play for two years (thanks, covid).
Right before the season started, Jack had his back injury. If you want to read more about that, check out this post. His movement limitations meant that he couldn’t play soccer. He was (understandably) beyond devastated. Will sweetly told him that he wasn’t going to play if Jack couldn’t play. Oh my, heart almost exploded. Jack had a huge smile on his face and told Will that he would cheer him on.
The first three practices that Will went to, he was not excited and cried for half the practice. I could never figure out exactly why because he would be so excited talking about going to soccer. The second we got there, poor buddy would refuse to leave my side.
Once he finally decided that playing soccer seemed like a fun idea, he did great at practice and loved it. I thought the same thing would happen on the first game day, but Will informed me prior to the game that he wasn’t going to cry. Sure enough, he sprinted out on the field and was ready.
At one point, Will ran over and asked me to tie his shoe. The second I was done tying his shoe, he sprinted down to the other end of the field, stole the ball and then dribbled it the length of the field and scored a goal.
He started clapping for himself when everyone else clapped. After I told him that he shouldn’t do that, he asked “Why not? Everyone else is clapping for me, why can’t I be proud of myself?” You make a good point, kid. But, there’s such a thing called being humble!
Salsa Verde Chicken
This chicken is so easy to make – pour a jar of salsa verde in a crockpot, add your chicken, and let the crockpot do the work! Once the chicken is done cooking, it shreds really easily.
It also freezes really well – just put a single layer in a reusable bag and lay it flat to freeze it. Then, when you are ready to use it, just break off the amount that you would like and heat it up!

- boneless skinless chicken breasts
- salsa verde
- salt
- white corn tortillas
- olive oil spray
- For serving: refried beans, cotija cheese, cilantro, onions
How to Make Homemade Tostadas
If you are short on time, you can always buy store bought tostadas. They still taste great (and are, obviously, much easier). But, if you want to try your hand at making your own, it’s a lot easier than you would think.
First, you need to get some tortillas. I prefer using white corn tortillas but yellow corn tortillas would work just as well. I like using white corn because I think the flavor is a little more subtle.
Preheat your oven to 400 degrees Fahrenheit. You want it hot so the tortillas crisp up fast. Spray both sides of the tortilla with olive oil and sprinkle on salt. Bake for 5 minutes, then flip the tortillas. Bake for an additional 5 minutes and enjoy the tostadas fresh out of the oven!

How to Make Quick Pickled Onions
If you are a fan of onions, then you need to try making pickled onions. They are incredibly easy to make and really elevate the flavors in a dish.
To make pickled onions, you only need 3 things: red onions, vinegar and white sugar.
- Thinly slice the onions and put them in a container of some sort (I like to use a mason jar).
- Add enough vinegar so the onions are covered.
- Add 1-2 tsp of white sugar.
- Shake (or stir) the ingredients until well combined.
- Let sit for a minimum of 15 minutes.
- Store in the refrigerator. Easy, right?!

Tips for Involving Kids
- Let your kids help you assemble the tostadas. Set everything out and then let them make their own. I’m always surprised at how many toppings the boys take that they wouldn’t otherwise want to try.
- There is always going to be a mess when you cook with your kids but, like my little guy Will (3 years old) says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Crockpot Salsa Verde Chicken Tostadas
Ingredients
- 2 lbs boneless skinless chicken breasts
- 1 cup salsa verde
- 1 tsp salt
- 8 white corn tortillas
- olive oil spray
- 2 tsp salt
- for serving: refried beans, cotija cheese, cilantro, onions
Instructions
For the Chicken
- In a crockpot, combine the chicken, salsa verde and salt.2 lbs boneless skinless chicken breasts, 1 cup salsa verde, 1 tsp salt
- Cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
- When done cooking, shred the chicken.
For the Tostadas
- Preheat the oven to 400 degrees Farenheit.
- Spray both sides of the tortillas with olive oil and sprinkle with salt.8 white corn tortillas, olive oil spray, 2 tsp salt
- Bake the tortillas for 5 minutes. Flip the tortillas and bake for an additional 5 minutes, or until crispy.
- To assemble: layer the refried beans, shredded chicken, pickled onions, cotija cheese and cilantro.for serving: refried beans, cotija cheese, cilantro, onions
