One of the really special things about having kids is being able to experience all of the different stages they go through. There’s the newborn stage where they are completely dependent on you and you can snuggle them all day long if you’d like.
That first year is so crazy – all the different milestones, one more impressive than the next. The amount that a child learns to do in that first year is literally mind-blowing. It is so fun to see their first steps, the first time they try a new food, the first word they speak.
I love the baby stage, but I enjoy it even more the older they get. Will is at such a fun age right now (he’s 3 if you didn’t know)! He’s so inquisitive, engaged and never stops talking. He thinks the world is a magical place. He literally comments on everything he sees and hears (I’m serious when I say he never stops talking) and it’s so fun to know what’s going on in that brain of his.
He understands so much and retains even more. He amazes me daily with the connections he makes, the things he remembers and the jokes he tells (I never thought my 3 year old would be telling me jokes that were actually funny, but he sure does)! He has no fear when it comes to making friends. He will just walk right up to another kid and say “Hi, I’m Will. Do you want to play?” Frankly, I think we could all learn a lot from a 3 year old!
Now, this stage is fun but, man oh man, it can be tiring sometimes. The never ending questions, the constant chatter, the frequent “Mom, can you play with me?”. It’s funny when all of these descriptions can be things that you love about a certain stage and, at the same time, things that can sometimes drive you a little bonkers! I’ve often heard the phrase “The days are long but the years are short” – this couldn’t be more true as a parent.
This past year, I feel like Jack has grown up about 4 years. I don’t know if it was the start of Kindergarten, or just him growing up, but he seems so old to me (excuse me while I grab a tissue). He likes doing things now that we like doing (and I’m not talking about feigning interest in what Chase is doing on the latest episode of Paw Patrol). This stage with him is an awesome one to reach – when you can do things together that we ALL enjoy.
I’ve mentioned in past posts how much Jack absolutely LOVES sports! Any sort of Minnesota team, and he is in it to win it. And, I’ll be honest, he’s almost a little too in it to win it. Case in point – I was walking down the stairs the other day and Jack was sitting on the couch crying (and not just a tear here or there, I mean full on sobbing). I was so worried and ran to him asking what was wrong. His response? “I am just DONE with Minnesota sports – we just always lose and I can’t take it anymore”. I had to try really hard not to laugh because the only thought running through my head was – welcome to the mindset of every Minnesota sports fan. Buckle up, buddy.
Over Thanksgiving weekend, Minnesota was playing Wisconsin in football. The Gophers have been having a stellar season and we knew this would be a big game. We had tossed around the idea of going and then my sister rallied the troops and my whole family decided to go to the game and cheer on the Gophers.
Matt and I were going back and forth on whether or not to bring Jack (we knew Will would have more fun at home), when we decided yeah, why not? Well, I’m so glad we brought him because even though the Gophers didn’t win (some tears were shed), Jack had the absolute time of his life!
He stood for the whole game chanting and cheering – “Come on, Tanner Morgan, we need a touchdown right now!!” (he knows every player on the team). It was snowing, sleeting and cold but Jack could have cared less. I think we heard “Thank you SO much for bringing me to this game” about 100 times that day. It was such a fun game and a memory we all will have for a very long time.

Speaking of memories, the holiday season is here and there a multitude of memories to be made! The holidays can sometimes be hard – there are gifts to buy, presents to wrap, cookies to bake, cards to send, the list goes on and on. And, on top of all of that, there are parties to host! Now, don’t get me wrong, I love a party as much as the next person but sometimes hosting can be a bit overwhelming.
Food for a Party
Which is exactly the reason why I created this recipe. These Crockpot Greek Chicken Bowls are perfect for a party! The majority of the work can be done ahead of time (imperative when hosting a party) and you can set out all the fixings so that people can customize and create their own bowls.
Crockpot Greek Chicken
The chicken is made in the crockpot, so you don’t have to tend to that while you are busy running around picking your house up! I can’t even begin to count the number of times we have done the mad dash around the house putting away toys before somebody comes over! Hopefully that’s not just me!
Homemade Tzatziki Sauce
Whenever I think of Greek food, tzatziki ALWAYS comes to mind. If you aren’t familiar with it, tzatziki is a yogurt based sauce. The Greek yogurt is traditionally combined with cucumber, garlic and dill. It is so good and (I think) delicious on pretty much everything.

Tips for Involving Kids
- This is a great recipe to let your kids try out those kid knives! Let them chop away and do the work for you!
- Have them help you measure out the ingredients for the marinade.
- Let them check in on the crockpot from time to time to see the progress (my boys love doing this)!!
- Show them how to use the blender when making the tzatziki sauce.
- Let them assemble their own bowl – my boys often try more things when I let them be in charge of putting together their own meal.
- There is always going to be a mess when you cook with your kids but, like my little guy Will (3 years old) says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
