Easy Egg Roll in a Bowl is a one-pan dish that can be made in 15 minutes. This quick and easy dinner has all the flavors of an egg roll, without the wrapper!
Not quite sure how, but summer is coming to an end. Although, on the other hand, I keep wondering how it’s not 2021 yet?! This summer hasn’t been exactly what we expected but we’ve still managed to have a lot of fun.
Summer weekends at the cabin have been such a nice getaway. Will pops out of bed and proclaims that he wants to catch a bass, so off we go to the dock. The kid is only four but he can FISH! He knows how to put on his own worm, cast, hook a fish, reel it in, AND unhook his fish. When it’s an especially tricky fish to unhook, big brother Jack comes to the rescue!

This summer, the boys have caught small mouth bass, large mouth bass, northerns, rock bass and and endless supply of sunfish. It has been so fun seeing their love for fishing grow this summer – Matt couldn’t be more excited!
While their love for fishing has grown, I think Jack’s love for the Twins has grown even more exponentially (if that’s even possible). He hasn’t missed one single game this summer! He knows the Twins ever evolving record, how many home runs each player has, who is on the IR list, the starting pitcher, you name it and he knows it!
Jack is very mathematically minded so it seems like the number heavy game of baseball is a perfect fit for him. People often ask how Jack first started liking baseball so much – we honestly have no idea. Neither Matt nor I played baseball or softball but Jack’s love for the game has ignited a new appreciation for baseball in all of us.
With only a few weeks left of summer, I’m trying to soak it all up. Although, it’s hard to not let my mind wander to the fall and the uncertainty that lies ahead. So here is my reminder (and yours if you need it!) to stay present in the moment and only focus on things that we can control!

And, a great thing that we CAN control is what we are making for dinner!! This Egg Roll in a Bowl has become our new family favorite. The boys scarf it up (and ask for seconds) every time I make this for dinner. The best part? They don’t even care that they are scarfing up a bunch of greens!
What Kind of Meat Should I Use?
In my recipe, I use ground pork because I think that the pork adds a really good flavor to the dish. If you don’t have pork, you can use ground beef, ground turkey, or ground chicken.
Depending on the type of meat that you choose, you may need to adjust the amount of oil that you use. Beef and pork tend to have a higher fat content, so they naturally give off more oil.
Meal Prep
This quick and easy meal is perfect for meal prep! Just keep the wonton strips separate and add them when you are ready to eat (they won’t get soggy this way).
You can easily portion this meal out for your weekly lunches – no thought required when you are trying to get out the door in the morning!
Can This Recipe Be Made Keto?
Yes, it can! All you have to do is eliminate the wonton strips from the recipe. You can’t eat traditional egg rolls on a keto diet, but you can eat this Easy Egg Roll in a Bowl!
You can have this for lunch (or dinner!) all week long by keeping all the different ingredients separate and assembling when you are ready to eat!
Tips for Involving Kids
- Let them help you measure out all of the ingredients – kids love being able to help with this!
- Have them assist you at the stove (with parental supervision, of course)! Teach them what part of the pan is hot, how they should stir, where they should hold the pan, etc.
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Easy Egg Roll in a Bowl
Ingredients
- 1 lb ground pork
- 3 garlic gloves minced
- ¼ cup soy sauce
- 1 tsp sesame oil
- 2 Tbsp rice vinegar
- 14 oz bag coleslaw
- salt and pepper to taste
- wonton strips for serving
Instructions
- Cook ground pork over medium heat until no longer pink.1 lb ground pork
- Once the pork is fully cooked, remove the excess grease. Add the garlic, soy sauce, sesame oil and rice vinegar to the pork. Stir to combine and cook until the garlic is fragrant.3 garlic gloves, ¼ cup soy sauce, 1 tsp sesame oil, 2 Tbsp rice vinegar, salt and pepper
- Add the coleslaw to the pan and cook for an additional 2 minutes.14 oz bag coleslaw
- When ready to serve, add wonton strips and enjoy!wonton strips
