I grew up fishing. Whether it was on the lake we lived on, or on a vacation to explore a new lake, we were always fishing! I have a lot of fond memories fishing with my parents. And, wouldn’t you know it, Matt grew up fishing too! Now, it is so fun for us to create new fishing memories with our family.
The love for fishing was definitely passed on to Jack and Will. But, at the moment, Will has definitely been bitten hard by the fishing bug. One weekend, Matt went trout fishing and was successful. When he got home, he showed Jack and Will the pictures of his trout. The second Will found out that he could drive to a creek an hour from our house and catch a trout, he was in. And he wanted to leave immediately.
Well, we managed to hold him off for 2 days of thunderstorms until Matt could finally take him. Jack thought about going but wasn’t convinced the hour long car ride was worth it. So, Matt and Will set off on their fly fishing excursion with high hopes.
Much to Will (and Matt’s delight), they caught 12 trout! It was the most that Matt had ever caught on this particular creek and it was absolutely perfect that it happened when Will was there. Will now tells every person that he sees “Hey, did you hear that I caught 12 trout?” He’s already planning his next fly-fishing adventure!

This Mango Chicken Salad reminds me of spring – the flavors are bright and fresh and it just looks so colorful! I am very proud of this salad because my husband, Matt, informed me that this is his favorite meal that I make. And this is saying a lot because Matt refused to eat a piece of lettuce prior to meeting me. So, have I convinced you to make this salad yet?!
Mango Salsa Ingredients
- Del Monte mangos
- red onion
- cilantro
- jalapeño
- lemon juice
- salt
Types of Mangoes
I love fresh mangoes. Not only are they super juicy but the flavor is just so good. But, cutting a mango is a labor of love. You have to peel it, remove the core and dice it. And, sometimes, I just don’t feel like doing that (nor do I have the time). Not to mention, you don’t always know how sweet a mango is going to be until you actually take a bite out of it.
I came across these canned Del Monte mangoes one time at a grocery store and had to try them. I was so impressed and now only use the canned mangoes in this recipe! Every can I have tried has perfectly ripe (and sweet!) mangoes. I highly recommend trying them.
Lemon Vinaigrette
- olive oil
- lemon juice – make sure that it is fresh squeezed!
- salt and pepper
Chicken Marinade Ingredients
- boneless skinless chicken breasts
- soy sauce
- lemon juice
- ground ginger
- sesame oil
How long to Marinate?
A question I often hear is “How long should I marinate my meat?” If you are in a real pinch, try to get at least 15-20 minutes of marinade time. While this may not be enough time to get the full flavor in the meat, you will definitely get some of the flavor.

Since I often find myself in a rush around dinner time, I try to make a double batch of the marinade and chicken and then freeze it. I freeze the chicken raw so I can just toss it all into a pan when I am ready to cook it. This has helped me (more times than I can count) to get dinner on the table fast.

Tips for Involving Kids
- Let your kids help you measure out all of the ingredients for the marinade and the vinaigrette. Have them shake the vinaigrette to their heart’s content.
- Have your kids help you dice up all the ingredients for the mango salsa with their very own knives.
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Salad with Warm Chicken, Mango Salsa and Lemon Vinaigrette
Ingredients
Chicken Marinade
- 2 lbs boneless skinless chicken breasts cut into bite-sized pieces
- ¼ cup soy sauce
- 2 Tbsp lemon juice
- ½ tsp ground ginger
- 1 Tbsp sesame oil
- lettuce for serving
Mango Salsa
- 15 oz can Del Monte mangos drained*
- ¼ cup red onion diced
- ½ cup cilantro chopped
- 1 Tbsp jalapeno diced
- 1 Tbsp lemon juice
- 1 tsp salt
Vinaigrette
- ½ cup olive oil
- ¼ cup lemon juice
- salt and pepper to taste
Instructions
- Combine all of the ingredients in the chicken marinade into a large bowl.¼ cup soy sauce, 2 Tbsp lemon juice, ½ tsp ground ginger, 1 Tbsp sesame oil
- Add the chicken and let it marinate while you prepare the rest of the salad.2 lbs boneless skinless chicken breasts
- While the chicken is marinating, combine all of the ingredients for the mango salsa and mix to combine.15 oz can Del Monte mangos, ¼ cup red onion, ½ cup cilantro, 1 Tbsp jalapeno, 1 Tbsp lemon juice, 1 tsp salt
- Refrigerate the mango salsa until ready to serve.
- Combine vinaigrette ingredients in a jar and shake to combine.½ cup olive oil, ¼ cup lemon juice, salt and pepper
- Cook the chicken over medium high heat (you can pour the marinade into the pan as well).
- When ready to eat, serve the cooked chicken and the mango salsa over a bed of lettuce and finish with the vinaigrette.lettuce
