Easy Red Curry with Bell Peppers and Turkey Meatballs
In this Easy Red Curry with Bell Peppers and Turkey Meatballs, a creamy, coconut curry is combined with garlic and ginger meatballs and served over rice with a squeeze of lime and some cilantro.
I’m a planner. Always have been. Always will be. So, when Matt suggested on a Wednesday night that we go camping the very NEXT day, I was a bit skeptical.
I immediately began a running list in my head of all the things that needed to be completed before we left – planning and packing food, getting our tent and sleeping bags ready, packing up all our clothes, the list went on.

Matt knows me well enough to anticipate the wheel spinning that was about to occur in my head, so he quickly followed with the suggestion that we pick up all of our meals curbside from restaurants. Well, I couldn’t turn that down. We went to bed and headed out on our adventure the next morning.

So, turns out, Matt had the best idea ever and we had the most enjoyable time camping. I’ve always loved that Matt is up for any adventure at any time – he definitely helps push me out of my comfort zone!
We did so many fun things! We biked all over Duluth. We threw rocks into Lake Superior. We let the kids run wild on the beach. We were “wilderness explorers”.
We taught the kids how to set up the tent. We slept under the stars. We roasted marshmallows. We went hiking. But, most importantly, we had some really fun, quality time together just the four of us. The boys absolutely loved it and asked when we could do it again – I told them I would get back to them after my hot shower.
Side note: if you are in the market for a tent, the one we have is amazing! I bought it on a whim a couple of years ago and it has been perfect for us. It’s gigantic – we fit 2 queen size air mattresses in it with room to spare. Even better, it is super easy to set up!

While I took a break from cooking on our camping trip, I’m back at it with some new recipes! This brand new recipe is packed with flavor and really easy to make.
How Can I Make this Quicker?
This recipe is already made rather quickly (thanks to the premade red curry paste). You definitely make it taste better than premade, thanks to the garlic and ginger. I like to make a double batch of the turkey meatballs and freeze half of them. Then, when it’s time to make dinner, you have the most time consuming step already completed.
What Kind of Meat Should I Use?
In my recipe, I use ground turkey because I really prefer to cook with ground turkey. It is a lot leaner than ground beef and tastes quite similar (to me). If you prefer though, you can use ground beef or ground chicken.
Meal Prep
This meal is perfect for meal prep! If you are worried about the rice soaking up too much of the curry, you can always keep the curry separate.
When you are ready to assemble meals for the week, I highly suggest pre-portioning them so you can just grab and go in the morning. I love using these containers for my meal prep.

Tips for Involving Kids
- Let your kids help you measure out all of the ingredients for the Creamy Raspberry Dressing.
- Put them in charge of the blender. What kid doesn’t like pushing buttons?!
- Have them help you assemble the salads.
- There is always going to be a mess when you cook with your kids but, like my son Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!
Easy Red Curry With Bell Peppers And Turkey Meatballs
Ingredients
Meatballs
- 1 lb ground turkey
- ½ cup bread crumbs
- 1 egg
- ¼ cup green onions sliced
- 2 Tbsp soy sauce
- ½ Tbsp ground ginger
- ½ Tbsp sesame oil
Red Curry
- 1 Tbsp red curry paste
- 2 cloves garlic minced
- 1 can coconut milk light or full fat
- 1 tsp ground ginger
- ¼ yellow onion diced
- 1 red bell pepper diced
- ½ lime juiced
- salt and pepper to taste
- cilantro for serving
- white rice for serving
Instructions
Meatballs
- Preheat the oven to 450 degrees Fahrenheit.
- Combine all meatball ingredients into a large bowl and mix.1 lb ground turkey, ½ cup bread crumbs, 1 egg, ¼ cup green onions, 2 Tbsp soy sauce, ½ Tbsp ground ginger, ½ Tbsp sesame oil
- Use a small cookie scoop to form the mixture into meatballs.
- Spray a cookie sheet with olive oil and place the meatballs on it.
- Bake for 15 minutes, turning the meatballs halfway through.
Red Curry
- Cook the rice according to the package directions.white rice
- Over medium heat, add the curry paste and garlic to a pan and stir to combine.1 Tbsp red curry paste, 2 cloves garlic
- Add the coconut milk and ginger and mix well.1 can coconut milk, 1 tsp ground ginger
- Add the onion and red pepper to the pan and cook for 3-4 minutes.¼ yellow onion, 1 red bell pepper
- Remove from heat and add the lime juice and salt & pepper, to taste.½ lime, salt and pepper
- Serve over rice with the meatballs. Garnish with cilantro.cilantro, white rice
