Easy Spinach Asiago Chicken Burgers

I never thought I would be able to spend this entire year at home with Will. We had him all signed up to go to preschool this year and decided to pull him late last summer. While it hasn’t always been smooth sailing, it has been such unexpected bonus time together.
Will is full of life – from the moment he gets out of bed in the morning to the moment he falls asleep at night. The second he wakes up, he blasts out of his room and basically kicks down our door. The boys have OK to Wake Clocks that we set to turn green at 7am. Will informs everyone he meets that he can’t tell time but he knows what “seven zero zero is because that’s when I can wake up”; this “trick” works about 50% of the time.
Will has the most incredible memory. He will often say to Matt and me “Do you remember when you told me… (fill in the blank)”. This could be something from the day before, the month before, or even the year before. It is unreal the memories he can recall. So, if you told Will, even in passing, that you were going to do something – you better be prepared to do it.
This pandemic, and the isolation that has come as a result, has been hard on Will. Sure he’s just 4.5 but he is an extrovert to his core. He loves making people laugh, playing sports with anyone and everyone and talking. He could literally spend all day talking.
Sometimes I don’t even know how he can come up with as many talking points as he does, but he has an endless supply. He loves trying out big words (and gets the context right most of the time) and can tell jokes like an adult. His new favorite thing is to ask us to tell him a word and then he comes up with as many rhyming words as he can.
He loves his big brother, playing any and all sports, snuggling, and playing with his “bad guys” (aka super heroes and Star Wars figures). I often refer to Will as my little Sour Patch Kid. The tag line for that commercial is “First they’re sour, then they’re sweet.” If you know Will in real life, you know this sentiment couldn’t be more true. He likes to lead with a tough facade (and make people think he’s a real tough guy) but, he’s insanely sweet and loves his mom more than anything.
I love Will’s zest for life. He finds joy in the mundane and lives in the moment. He loves his family more than anything and we couldn’t adore him more!

The other reason this recipe is great is because it freezes really well. Since this recipe makes 10 burgers, chances are that you won’t be eating all 10 burgers in one sitting (unless you are having a party or have a really hungry family)! So, freezing the leftover burgers is a perfect solution.
Easy Spinach Asiago Chicken Burger Ingredients
- ground chicken
- spinach
- egg
- bread crumbs
- asiago cheese
- garlic
- salt and pepper
- for serving: hamburger buns, lettuce, tomato, onion
After you have made the patties, place them in a single layer on a cookie sheet (lined with parchment paper). Cover them with another layer of parchment paper and freeze them until solid. Once they are frozen solid, you can put them in a freezer bag and then take out however many you plan on using. I hope you enjoy this recipe!

How Should I Cook these Easy Spinach Asiago Chicken Burgers?
While most people prefer to grill a traditional burger, I highly recommend pan-frying these chicken burgers. Since they are so lean, they will stick to the grill and fall apart. If you pan fry them over medium-low heat, they will stay nice and juicy and will stay in the patty shape.
Substitution Options
While these Easy Spinach Asiago Chicken Burgers are designed with ground chicken, you can just as easily use ground turkey. The two meats have very similar flavors but I think ground chicken lends itself to this recipe a little more because of it’s more mild flavor.
Another substitution option is for the asiago cheese. Asiago cheese can sometimes be hard to find in grocery stores. Not to worry, though! If you can’t find asiago, you can substitute shredded parmesan cheese. The flavor profile won’t be drastically different – after all, we just really want some cheese in there!

Tips for Involving Kids
- Let your kids help you squeeze out all of the liquid from the spinach. There is a lot more there than you would think so it will keep them busy for awhile!
- Have your kids help you measure out all of the ingredients. This helps with hand-eye coordination, patience, listening skills, math (the list goes on) and they will love it!

Spinach Asiago Chicken Burgers
Ingredients
- 2 lbs ground chicken
- 10 oz frozen spinach thawed & squeezed dry
- 1 egg
- ½ cup plain bread crumbs
- 1 cup asiago cheese shredded
- 3 cloves garlic minced
- salt and pepper to taste
- 1 Tbsp olive oil
- hamburger buns, lettuce, tomato, onion for serving
Instructions
- After removing all of the liquid from the spinach, combine all ingredients into a large bowl and mix to combine.2 lbs ground chicken, 10 oz frozen spinach, 1 egg, ½ cup plain bread crumbs, 1 cup asiago cheese, 3 cloves garlic, salt and pepper
- Form into similar sized patties. In a pan over medium heat, add a drizzle of olive oil and cook until no longer pink in the middle.1 Tbsp olive oil
- Freeze any remaining patties in a single layer.
