The Minnesota Zoo used to be one of our favorite places to go before the pandemic. It’s only 15 minutes from our house, so it’s super easy to pop in for a few hours.
And then, the pandemic hit. The Minnesota Zoo shut down and our favorite adventures came to a screeching halt. But, as of last week, Minnesota is 70% vaccinated (woo hoo!!). This definitely has helped to put my mind at ease, so we decided that it was finally time to renew our annual membership.
The boys were so incredibly excited to head back to the zoo. We had to make a game plan before we left because the boys were very torn on the animals they wanted to see.
The popular vote ended up being the tiger! The grizzly bears were a close second.
We were able to walk all around the zoo and check out so many animals. The boys had the most gigantic smiles on their faces as they skipped around. It’s so much fun to get back to doing some of our favorite things!
Now that we are busy with fun summer activities again, I try to always have a filling breakfast for myself and the kids. This Sweet Potato Breakfast Scramble is the perfect healthy breakfast to start our day out on the right foot.

If you want to make it taste extra fresh every morning, you can scramble your eggs fresh in the morning but have the potatoes, peppers and onions ready to go!

How to Make this Sweet Potato Breakfast Scramble
- Rinse the sweet potatoes and peel them.
- Once peeled, cut the sweet potatoes into small cubes. The smaller the potatoes are, the faster they will cook.
- Heat a pan over medium heat. Add olive oil and the cubed sweet potatoes.
- Sprinkle the sweet potatoes with Lawry’s seasoned salt and cook for 15 minutes, stirring occasionally.
- Add the red bell pepper and white onion and cook for an additional 5 minutes.
- Push the potato mixture to the sides of the pan and crack 4 eggs into the middle of the pan.
- Stir the eggs with a spatula to scramble them.
- When the eggs have been fully cooked, top the Sweet Potato Scramble with fresh parsley and enjoy!

Yes, you can use dried parsley (if you have it). Otherwise, you could use cilantro or green onions.

Tips for Involving Kids
- With your supervision, have your kids help you peel and cut up the sweet potatoes, peppers and onions with their own knives.
- Let your kids help you cook all the vegetables.
- Have your kids crack the eggs into the skillet. It might get messy but that’s okay! Nothing a little paper towel can’t clean up.
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!

- 2 sweet potatoes peeled and diced
- ½ Tbsp olive oil
- ¼ white onion diced
- 1 red bell pepper diced
- ½ tsp Lawry’s seasoned salt
- 4 eggs
- parsley for serving
Instructions
- Heat the olive oil in a large skillet over medium heat.½ Tbsp olive oil
- Add the sweet potatoes and onion.2 sweet potatoes, ¼ white onion
- Cook, stirring occasionally, until the potatoes are lightly browned (around 10 minutes).
- Add the bell pepper and cook for an additional few minutes.1 red bell pepper
- In a separate bowl, crack the eggs and scramble them.4 eggs
- Push the sweet potato mixture to the sides and pour the scrambled eggs into the middle of the pan.
- Cook the eggs until your desired doneness and then mix everything together. Season with Lawry’s and sprinkle with parsley. Enjoy!½ tsp Lawry’s seasoned salt, parsley
Can you make dish in the crock pot? Is this dish transportable and freezable?
I have never made this in the crockpot, so I can’t speak to that. Pan frying the sweet potatoes allows them to crisp up a bit, whereas cooking the sweet potatoes in a crockpot might make them a bit mushy.
As far as transporting and freezing it – you can cook the sweet potato hash and freeze that ahead of time, but I would cook the eggs separately when ready to serve.
When you say, ‘scramble,’ do you mean whisk the eggs together? I’ve never heard of eggs in a bowl being scrambled. To me, eggs are considered scrambled after they are cracked, whisked, poured into a pan with some butter and cooked like that. Thank you!
