Cajun Chicken Sandwich
These Cajun Chicken Sandwiches are easy to make and perfect for weeknights. They are tender, juicy and perfectly spicy! Sandwiched between two toasted buns, they are piled high with bacon, lettuce and tomato and finished with a delicious cajun sauce.
I can’t be the only one who is craving a change of scenery right now. I love our house but when you are there allllll the time, it can get a little old.
So, we were so excited when the four of us got to go up to the cabin for a long weekend! It just so happened to be an insanely cold weekend but it was so much fun nonetheless.
We spent lots of time in the hot tub (with winter hats) and sauna. It is so incredible when you are sitting in a hot tub and it starts snowing – it’s absolutely beautiful!
We also got in a ton of skiing! The boys are at such fun ages right now – they are able to do so many more things with us this year as compared to last year.
Last year, we would put them both in our Chariot (yes, that’s the actual name) and ski while they were crammed in the back. This year was a different story. They both have their own skis and were able to each ski for 2 hours!
When we got back to the cabin, they were exhausted! Jack informed me that “he REALLY needed to take a load off”. Will was limping around and after Dr. Dad checked him out, he informed his patient that he had a hamstring overuse injury. Sorry, boys. Maybe we shouldn’t ski for 2 hours next time! Although, to be fair, THEY were the ones who wanted to keep going.

Cajun Seasoning
There are a lot of different types of cajun seasonings. Depending on your preference of spicy, you can choose a seasoning that matches your spice level. For my crew, we definitely prefer Minnesota Spicy (read: just a hint of spice)!
Before you season your chicken, make sure to taste the cajun seasoning to see how salty it is. If it is extremely salty, skip adding the additional salt in the ingredients.
Let’s Talk Toppings
With these chicken sandwiches, I love topping them with slice (or two!) of tomato, lettuce and (several) slices of bacon. Oh, and you can’t forget the cajun mayo – it makes the sandwich so delicious. If these toppings don’t strike your fancy, you can customize your toppings based on whatever you like!
How to Serve Cajun Chicken Sandwiches
In all of the pictures I have on this blog post, I assembled the Cajun Chicken Sandwiches with a whole chicken breast. If you would like, you could slice the chicken breast after it is cooked. This might be a better option for kids since the sandwich wouldn’t be stacked quite as high.

- boneless skinless chicken breasts
- olive oil
- Cajun seasoning
- salt
- plain Greek yogurt
- lime juice
- hamburger buns, lettuce, tomato and bacon

Tips for Involving Kids
- Let your kids help you measure out all the ingredients. Letting your kids help you measure out ingredients is a perfect opportunity to practice hand-eye coordination, self control, following directions, the list goes on.
- Give the (sealed) bag to them to combine the chicken and the seasonings.
- Have them help you slice the tomatoes with their very own knives! You can find them here.
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
Cajun Chicken Sandwich
Ingredients
Cajun Chicken Sandwich
- 4 boneless skinless chicken breasts
- 2 Tbsp olive oil
- 1 Tbsp Cajun seasoning
- ½ tsp salt
- for serving: hamburger buns lettuce, tomato and bacon
Cajun Sauce
- ½ cup plain Greek yogurt
- ½ tsp Cajun seasoning
- squeeze of a lime
Instructions
- Place the chicken breasts in a ziploc bag and pound them to an even thickness (about 1/2 inch thick).4 boneless skinless chicken breasts
- Dump the olive oil, cajun seasoning and salt into the ziploc bag with the chicken and shake to combine.2 Tbsp olive oil, 1 Tbsp Cajun seasoning, ½ tsp salt
- In a pan, over medium heat, cook the chicken breasts (on both sides) until they are no longer pink in the middle.
- While the chicken is cooking, combine all the ingredients for the Cajun Sauce.½ cup plain Greek yogurt, ½ tsp Cajun seasoning, squeeze of a lime
- When the chicken is cooked, assemble the sandwiches with your favorite toppings – don’t forget to use the Cajun Sauce!for serving: hamburger buns
