Crockpot Pulled Pork Tacos with Pineapple Salsa and Chipotle Lime Crema
Deliciously pulled pork seasoned with adobo is topped with a fresh pineapple salsa and drizzled with a chipotle lime crema. These Crockpot Pulled Pork Tacos with Pineapple Salsa are insanely delicious! Taco Tuesday, anyone?
Our family loves tacos. A LOT. I especially love tacos when I can make the meat in the crockpot (if it makes my life easier, I am in!). These tacos combine savory pulled pork with a bright and fresh pineapple, cilantro and jalapeño salsa. Top them off with my chipotle lime crema and you are good to go!
One of the nice things with tacos is that they are very easy to customize. When I give these tacos to my kids, I skip putting on the chipotle lime crema and take a scoop of the pineapple salsa that doesn’t have jalapeño in it.
Crockpot Pulled Pork Ingredients
- boneless pork shoulder
- white onion
- chicken broth
- Worcestershire
- apple cider vinegar
- brown sugar
- Dijon mustard
- garlic powder
- onion powder
- chipotle peppers in adobo sauce
- salt and pepper

What Kind of Pineapple Should I Use?
Since there are so many different flavor profiles in these tacos, it doesn’t matter as much whether or not you use fresh or canned pineapple. Fresh pineapple is always going to be better but with it, comes a little more work. So, if you have the time, cut the fresh pineapple. If you don’t have time, canned pineapple is just fine.

Can you freeze Crockpot Pulled Pork?
Yes! Whenever I make this recipe, I always double the crock-pot pulled pork recipe so that I can freeze any leftovers. Whatever is left from our dinner, I put it in freezer Ziploc bag (it freezes really well). Then, the next time we want to have these tacos for dinner, it is super easy to pull the pork out of the freezer and just make the salsa!

Tips for Involving Kids
- Let them help you measure the ingredients for the crock-pot pulled pork and pour them into the bowl (there are a lot so this will keep them busy)!!

Crockpot Pulled Pork Tacos with Pineapple Salsa
Ingredients
Crockpot Pulled Pork
- 2 lbs boneless pork shoulder
- ¼ white onion quartered
- 5 cups chicken broth
- 5 Tbsp Worcestershire
- ½ cup apple cider vinegar
- 1 Tbsp brown sugar
- ½ Tbsp Dijon mustard
- ½ Tbsp garlic powder
- 1 tsp onion powder
- 1 Tbsp chipotle peppers in adobo sauce
- salt and pepper to taste
- tortillas for serving
Pineapple Salsa
- 2 cups pineapple diced
- ¼ cup cilantro chopped
- 2 tsp jalapeno diced
- 3 Tbsp red onion diced
- ½ lime juiced
- 1 tsp salt
Chipotle Lime Crema
- ½ cup plain greek yogurt
- 1 lime juiced
- 1 tsp chipotle peppers in adobo sauce
- 1 Tbsp skim milk
- 1 tsp sugar
- ½ tsp salt
Instructions
Crockpot Pulled Pork
- Add all of the ingredients to the crockpot, except for the pork and the onions.5 cups chicken broth, 5 Tbsp Worcestershire, ½ cup apple cider vinegar, 1 Tbsp brown sugar, ½ Tbsp Dijon mustard, ½ Tbsp garlic powder, 1 tsp onion powder, 1 Tbsp chipotle peppers in adobo sauce
- Mix the ingredients and then add the pork shoulder and the onion to the crockpot.2 lbs boneless pork shoulder, ¼ white onion, salt and pepper
- Cook the pork on low for 4-5 hours or on high for 3-4 hours.
- To assemble the tacos, place the pulled pork in a tortilla and top with the pineapple salsa and chipotle lime crema.tortillas
Pineapple Salsa
- Combine the pineapple, cilantro, jalapeno and red onion in a bowl.2 cups pineapple, ¼ cup cilantro, 2 tsp jalapeno, 3 Tbsp red onion
- Add the lime juice and salt and mix to combine.½ lime, 1 tsp salt

- Put all of the ingredients in a bowl and whisk to combine.½ cup plain greek yogurt, 1 lime, 1 tsp chipotle peppers in adobo sauce, 1 Tbsp skim milk, 1 tsp sugar, ½ tsp salt
