We are still trucking along over here – Matt and I have been alternating being the teacher of the day for Jack. We are on a strict every other day plan (Jack looooves a good routine) and it has been working out pretty well. Jack is such a hard worker. He is (impressively) focused for a 6 year old.
There are some things he isn’t too fond of (art projects and detailed writing) but the kid can crush any math problem and creates an epic book (always centered on the theme of “The Three Little Pigs” but varied by the animal he chooses). It’s sad that Jack can’t be with his teacher and his friends, but we are trying to make the best of it!

Will is more or less unfazed by all of this. He just continues on with his energetic and engaging self – always wanting to be the center of everything!
We have been talking about Covid-19 and it’s impact on our world with the boys. Although it’s a tough conversation (and difficult to explain to a 6 and 3 year old), they have responded amazingly well.
Will’s response? Our neighbors were walking by the other day and stopped at the end of our driveway. We were playing baseball in the front yard and Will said (very loudly) “MOM!!! Are they at least 6 feet away?!” Oh man, I just about died laughing.
Jack’s response? Total acceptance. Matt and I (especially me) have struggled with the cancellation of so many things – our trip to Portugal, Jack’s school, playgrounds closed, can’t see friends, the list goes on. Notably, these are minor issues compared to the toll this global pandemic has had on so many. But, amidst all of this, Jack has taken it all in stride.
Every night, before we eat dinner, we all go around the table and say what we are thankful for. The other night, Jack said “I’m thankful for being able to spend all of this time with my family”.
I almost started crying – the resiliency of kids is incredible. They don’t care about all of these events getting cancelled – they just want to spend quality time with the ones they love.
Maybe a little more of a dramatic post than you expected but that’s our reality right now. Frankly, it’s everyone’s reality now. And I know that some of you have endured much, much more. My thoughts and prayers are with you always.
So, onto a lighter note. Food. Everyone needs it and everyone is cooking from home right now.
These Crockpot Swedish Meatballs are just the easy comfort food we all need right now. Throw all the ingredients into a crock pot and let the flavors all meld together.
I hope you enjoy this easy and delicious meal!
What Type of Meatballs?
You can definitely make homemade meatballs for this recipe, but I created this recipe with EASY in mind. So, I like to use pre-made, frozen meatballs, specifically turkey meatballs. I like the flavor of turkey meatballs better and they are healthier for you – a win win!
How Should I Serve these Meatballs?
There are multiple ways to serve these meatballs. You can serve them on their own, with a side of veggies, over noodles or with mashed potatoes! My personal favorite is over mashed potatoes – the gravy doesn’t get wasted (hello mashed potato crater).
I have a great recipe for Crockpot Garlic Mashed Potatoes that are incredibly easy to make and taste absolutely delicious. I have served these Swedish Meatballs all three ways and my boys liked them all. So, pick your favorite – you can’t go wrong!

Tips for Involving Kids
- Have them help you dice up the onions and garlic with their very own knives!
- Let your kids help you measure out all the ingredients and add them to the crockpot.
- Have them be in charge of combining all of the ingredients.
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.” Have fun cooking with your kids!!
