30 Minute Instant Pot Sausage, Potato & Kale Soup
Instant Pot Sausage, Potato & Kale Soup, also known as Zuppa Toscana, comes together in under 30 minutes but tastes like it has been simmering all day long. The creamy, spicy broth is loaded with Italian sausage, potatoes and kale.
I‘ve lived in Minnesota my whole life. Which means, I’ve dealt with Minnesota winters my whole life. Anyone who has experienced a MN winter, knows the importance of fully embracing it. Winter can last so long that if you don’t try to enjoy it, it can really get to you.

I think that has never been more true than in 2020. With the need to socially isolate and keep gatherings to your immediate family, the need for some fresh air and outside time has never been more important.
The boys and I made a pact that, regardless of the weather, we are going to make a point to get outside every single day. We have tried to do this before but I haven’t always held up my end of the bargain – I can sometimes be a bit of a freeze baby. Well, not this year! I got fleece lined pants, super warm mittens and boots (my favorite!) that will keep my toes toasty. MN winter – bring it on!
Matt had to work this past weekend so the boys and I ventured to our neighborhood playground. We were the only ones there and the boys had such a fun time! We came home and made hot cocoa – I have a feeling this will become a new daily routine.
There really is something nice about coming in from the cold to have something that will warm you up from the inside out. While the boys sipped their hot cocoa, I ate a bowl of deliciously warm soup. And not just any soup – my 30 Minute Instant Pot Sausage, Potato and Kale Soup.
This soup is absolutely delicious. You have everything you need in one bowl – meat, potatoes and vegetables.

- Italian turkey sausage
- white onion
- garlic
- dried oregano
- chicken broth
- potatoes
- kale
- skim milk
- half and half
- salt and pepper

What Type of Sausage Should I Use?
I always prefer to use turkey sausage. I don’t notice a substantial difference in flavor and turkey sausage is a lot healthier than pork sausage. That makes for a win-win in my opinion!
Let’s Talk Potatoes
I’ll be honest with you here – it really doesn’t matter what type of potatoes you use. You can choose from russet, red, white, yellow or purple potatoes (although the purple potatoes might impart an odd color to your broth). The potatoes take on the flavor of the broth, so the type you choose won’t make a large difference
It is not necessary to peel the potatoes for this recipe. If you don’t care for potato skins, you definitely can peel them but I don’t think it makes a difference with the soup.
Do I Have to Use an Instant Pot?
If you have an Instant Pot, I would highly recommend using it to make this soup. Since you have to sauté the sausage first, it makes it so much easier to make this soup in the Instant Pot with the sauté feature.
However, if you don’t have one, you can still enjoy this soup! You could sauté the sausage on the stovetop first and then finish everything in your crockpot. Or, you can use a Dutch oven (or some oven safe pot) to cook your sausage first and then finish in the oven. Basically, you have options!

tips for involving kids
- Let your kids help you measure out all the ingredients. Letting your kids help you measure out ingredients is a perfect opportunity to practice hand-eye coordination, self control, following directions, the list goes on.
- Have them help you press the buttons on the Instant Pot. Yes, this may only take a second, but what kid doesn’t love pressing buttons?!
- There is always going to be a mess when you cook with your kids but, like my little guy Will says, “It’s okay Mom, chefs make messes and then they clean it up.”
- Have fun cooking with your kids!
30 Minute Instant Pot Sausage, Potato and Kale Soup
Ingredients
- 1 lb Italian turkey sausage
- ½ white onion diced
- 3 cloves garlic minced
- ¾ tsp dried oregano
- 4 cups chicken broth
- 3 medium potatoes cut into bite-sized pieces
- 1 bunch kale stems removed and chopped
- ½ cup skim milk
- ¼ cup half and half
- salt and pepper to taste
Instructions
- Select “Sauté” on the Instant Pot and set the timer for 15 minutes.
- Add the Italian sausage, garlic, onion and oregano to the instant pot. Cook until the sausage is no longer pink.1 lb Italian turkey sausage, ½ white onion, 3 cloves garlic, ¾ tsp dried oregano
- Add the chicken broth and scrape up anything stuck to the bottom of the Instant Pot.4 cups chicken broth
- Add the potatoes to the Instant Pot.3 medium potatoes
- Put the lid on and turn the valve to the “sealing” position. Select “High Pressure” and set the timer for 5 minutes.
- Once the Instant Pot is done cooking, allow the the pressure to naturally release for 10 minutes and then manually release any remaining pressure.
- Add in the kale and let sit for a few minutes to soften.1 bunch kale
- Stir in the milk and half & half.½ cup skim milk, ¼ cup half and half
- Season with salt and pepper and enjoy!salt and pepper
