The past year, Matt and I have started doing something special with the boys. We have made a fun date night where we take Jack and Will on their own special dates. They absolutely LOVE these nights! It’s so fun for Matt and me to spend some quality time with them individually.
Time with jack
Last weekend, we did a day date where Matt took Jack to Twinsfest and Will and I had a day together. Jack had an absolute blast – taking the light rail to downtown Minneapolis, getting to explore the Twins stadium, meet some of the players and try his hand at VR (I wish I could have seen this – Matt said it was SO funny)!

Jack was literally skipping when he came home. He went to bed that night and I heard him tell Matt, “You are the best Daddy – thanks so much for taking me to Twinsfest. I had so much fun”. Ummm, yeah, I cried in the hallway. Those are the moments that make parenting so incredibly magical.
Time with Will
Will and I spent a day playing whatever he desired. His favorite game lately is when I pretend to be a kitty (this game literally brings him so much fun and I do not know why – haha). It pretty much consists of me pretending like I’m a cat and him staring at me with his big blue eyes with a giant smile on his face!
His next request was to take a tubby with “LOTS of bubbles” and then do a face mask with me. Spa day?? Sign me up!
After we wrapped up our spa day, we got Chick-fil-A (Will’s request and I willingly obliged – he looooves their chicken nuggets) and then we went and saw Frozen 2. We had so much fun! He watched the whole movie; I was quite impressed. He alternated from sitting in his chair, sitting in my lap and standing on the steps (whatever works, right?!).
He thought it was extra special because I let him pick out any candy he wanted. Plus, we got popcorn AND an icee – he was in heaven! I asked him what his favorite part of the movie was and he responded with “The Skittles!!!”
If you’ve never done separate dates with your kids, I would highly recommend it! It makes them feel so special and happy and is nice for parents to see their kiddos individual personalities shine through. These dates don’t have to cost a lot either – Will would have been happy as a little clam if we had just done our little “Spa Day” at home! Plus, a bag of Skittles, of course!

This is the kind of soup that you are impressed with yourself after you taste it. The broth is so multi-dimensional and flavorful it seems like you must have spent alllll day developing those flavors – nope, just 30 minutes.
Can I Substitute Something for Miso Paste?
The key to this flavorful broth is the miso paste – no substitute will give you the same flavor (believe me, I have tried). Miso paste is not that expensive and will keep for a long time in your fridge. Then, you can have it on hand for the next time you whip up this ramen.
When you are ready to serve, just make enough noodles that you are going to eat right then. The noodles are super easy to make (they literally cook in 3 minutes in boiling water) and they tend to absorb a lot of the broth if you keep them in the fridge with the broth. Tips for involving kids
- Let your kids help you slice the mushrooms with their very own knives. Mushrooms are the perfect thing for younger kids to slice.
- Have your kids be in charge of making sure the water doesn’t boil over for the ramen. I swear this always happens when I turn my back!
- Make sure to have fun with your kids. Sure, messes will be made and it might take a little longer, but the memories are worth it!
Upgraded Ramen with an Easy Miso Broth
Ingredients
- 8 cloves garlic minced
- ¼ cup miso paste
- 4 Tbsp sesame oil
- 4 Tbsp soy sauce
- 3 cups chicken stock
- 1 cup soy milk
- 4 packages ramen noodles packets discarded
- 8 oz mushrooms sliced
- ½ cup green onions sliced
- 1 cup cooked chicken shredded
Instructions
- Add sesame oil to a sauce pan on medium-low heat.4 Tbsp sesame oil
- Add garlic and saute until fragrant.8 cloves garlic
- Add miso paste and cook for 1 minute.¼ cup miso paste
- Increase the heat to medium and add soy sauce, chicken stock and soy milk.4 Tbsp soy sauce, 3 cups chicken stock, 1 cup soy milk
- Add the mushrooms and chicken to the broth and simmer for 5 minutes.8 oz mushrooms, 1 cup cooked chicken
- While the broth is simmering, cook the ramen noodles according to the package directions (discard the seasoning packet).4 packages ramen noodles
- When noodles are cooked, drain the water.
- When ready to eat, combine noodles and broth (with chicken and mushrooms) and serve hot. Top with sliced green onions and enjoy!½ cup green onions
This recipe is so good and made the house smell amazing! Everyone in the family loved it and we’ll definitely be making it again.
