20 Minute Cashew Chicken and Veggie Stir Fry
This 20 Minute Cashew Chicken and Veggie Stir Fry is loaded with bell peppers, snow peas and chicken. Simmered in a delicious sesame and soy sauce, it is topped with cashews to create an easy and healthy weeknight meal.
If you have followed along with me at all, you’d know that my kiddo (Jack) is slightly obsessed with baseball. And the Minnesota Twins. Jack wants to constantly play baseball and constantly watch baseball. So, naturally, Will (Jack’s brother) now also loves the Twins.
We thought it would be really fun to bring the boys to a Twins home opener. After all that we dealt with due to covid, we decided the 2022 Twins Home Opener was the one for us. We pulled the kids out of school and they were beyond excited.
It may have been April (April 8, 2022) to be exact but it was COLD. While I can’t remember the exact temperature, it was cold enough to wear winter jackets, hats and mittens.
We had so much fun – the boys got ice cream in mini baseball caps, Jack cheered his little heart out, Will ate his little heart out and we all had such a great time together as a family!
Honestly, I don’t even remember if the Twins won. But, what I do remember are the smiles on Jack and Will’s faces. The snuggling in our plastic seats because we were all cold. The constant (and I mean, constant) cheers/chants/outright screaming coming from Jack. The ice cream drips on their winter coats. That’s the stuff I will remember. Forever.

Who doesn’t love a good one pan recipe? Easy setup, easy cleanup. It doesn’t get any better!
For this particular recipe, you will cook the chicken first and then the veggies will cook in the same pan. Not only does the one pan make cleanup easier but it makes for fewer things to manage – only one pan to watch!
Less dishes, quicker cleanup, yes please.
What Vegetables Should I Use?
As with any stir fry, you can use a wide variety of vegetables but these are the particular veggies that I think work really well in this recipe.
- green onions
- bell peppers (any color)
- snow peas
- garlic
Cashew Chicken & Veggie Stir Fry Directions
- Slice the chicken and pan fry it in some oil.
- While the chicken is cooking, mix all of the sauce ingredients together.
- Remove chicken and stir fry all the veggies together.
- Once the veggies are cooked, add the chicken back in and toss thoroughly with the sauce.
- Cool until the sauce thickens and serve immediately.

20 Minute Cashew Chicken and Veggie Stir Fry
Ingredients
- 2 lbs boneless skinless chicken breasts cut into bite-sized pieces
- ½ cup chicken broth
- ¼ cup soy sauce
- 2 Tbsp sesame oil divided
- 2 tsp cornstarch
- 4 green onions sliced
- 2 bell peppers any color, sliced
- 6 oz snow peas cut in half
- 4 cloves garlic minced
- ½ cup cashews chopped
- salt and pepper to taste
Instructions
- In a small bowl, combine the chicken broth, soy sauce, 1 Tbsp sesame oil and cornstarch.½ cup chicken broth, ¼ cup soy sauce, 2 Tbsp sesame oil, 2 tsp cornstarch
- Over medium heat, cook the chicken in the remaining sesame oil. Stir fry the chicken until lightly browned.2 Tbsp sesame oil, 2 lbs boneless skinless chicken breasts
- Add the green onions, bell peppers, snow peas and garlic to the pan. Stir fry until the vegetables are tender.4 green onions, 2 bell peppers, 6 oz snow peas, 4 cloves garlic, salt and pepper
- Pour the sauce over the chicken and veggies and stir to combine. Cook until the sauce thickens.
- Top with the cashews and serve immediately.½ cup cashews
